Beef Stew

Put all ingredients in crockpot in the order listed
- 3 carrots cut up (peeled - or use baby carrots instead)
- 3 potatoes cut up (peeled)
- 2 lbs stew meat cut in 1-1/2 inch cubes
- 1 cup water
- 1 tsp Worcestershire sauce
- 1 clove garlic (or just a little garlic powder)
- 1 bay leaf (optional)
- 1/2 Tbsp salt
- 1/2 tsp pepper
- 1 tsp paprika
- 3 or more onions, quartered (take the skins off)
- 1 stalk celery with tops, cut up (optional)
Butter Rum Pound Cake

Preheat oven to 350deg. To prepare cake, coat an 8x4 inch loaf pan with cooking spray; dust with 2 Tbsp flour
- Cake:
- Cooking spray
- 2 Tbsp all-purpose flour (about 6-3/4 oz.)
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 cup granulated sugar
- 1/2 cup butter, softened
- 2 large eggs
- 1/2 cup spiced rum
- Glaze:
- 1 cup powdered sugar
- 1-1/2 Tbsp spiced rum

- 1 cup packed brown sugar
- 1/4 cup cornstarch
- 1/2 tsp salt
- 3 cups 1% low-fat milk, divided
- 1 large egg, lightly beaten
- 1 large egg yolk, lightly beaten
- 1 Tbsp butter
- 1 tsp vanilla
- 6 Tbsp frozen reduced-calorie whipped topping, thawed

- 1 cup fat-free milk
- 1/2 cup sliced onion
- 2 garlic cloves, crushed
- Dash of ground nutmeg
- 2 Tbsp all-purpose flour
- 1/3 cup (about 1-1/2 oz.)grated fresh Parmesan-Reggiano cheese
- 1/3 cup (about 1-1/2 oz.) shredded reduced-fat Jarlsberg cheese
- 1/4 tsp salt
- Dash of ground red pepper
- 6 cups broccoli spears

- 10 cups chopped kale, divided
- 1/2 cup fat-free, less-sodium chicken broth, divided

- 2 bacon slices, cooked and crumbled

Country Turkey Noodle Soup

In 3 quart saucepan over medium heat, combine all ingredients except turkey and noodles
- 3 cans (14 1/2 oz. EACH) Swanson clear ready to serve chicken broth
- 1/4 c. chopped celery
- 1/4 c. chopped carrot
- 1 tbsp. minced onion
- 1 tbsp. minced parsley
- 1/8 tsp. poultry seasoning
- 1/8 tsp. thyme leaves
- 2 c. diced cooked turkey
- 1 c. cooked medium noodles
Easy Tuna Casserole

Note: 1 pkg. frozen (thawed) mixed peas and carrots may be substituted for canned
- 1 pkg. egg noodles
- 1 celery stalk (chopped)
- 1/2 med onion (chopped)
- 2-6 oz cans tuna (drained)
- 2-10.5 oz cans Cream of Mushroom Soup
- 3/4-14.5 oz can mixed peas and carrots (drained)
- 1 1/2 c. cheddar cheese
- 1/2 c. mozzerella cheese

- 2 sticks unsalted butter, plus more for the pan
- 8 oz. bittersweet chocolate, chopped
- 4 large eggs

- 2 tsp vanilla extract
- 1-1/2 cups all-purpose flour
- Kosher salt
- 8 large peanut butter cups, cut into pieces
