Butterscotch Gingerbread Cookies

- 3 cups all-purpose flour
- 2 tsp baking soda
- 1-1/2 tsp ground cinnamon
- 1-1/2 tsp ground ginger
- 3/4 tsp ground cloves
- 1/2 tsp salt
- 1-1/2 cups packed brown sugar
- 1 cup (2 sticks) butter or margarine, softened
- 1/3 cup mild molasses
- 1 large egg
- 1-2/3 cups (11 oz pkg) Nestle Toll House Butterscotch Flavored Morsels
Sausage and Summer Squash

Preheat broiler. In small bowl combine dressing and garlic
- 1/3 to 1/2 cup bottled Italian salad dressing
- 2 cloves garlic, minced
- 12 oz cooked Polish sausage links, halved lengthwise, sliced diagonally
- 2 small yellow summer squash and/or zucchini, quartered lengthwise
- 4 wedges Italian flat bread, split
- 1/4 cup sliced green onions
- Fresh oregano leaves
- 1/4 cup coarsely shredded Parmesan cheese (optional)
Good Eats Roast Turkey

Combine all brine ingredients, except ice water, in a stockpot, and bring to a boil
- For the brine:
- 1 (14-16 lb) frozen young turkey (we used fresh)
- 1 cup kosher salt
- 1/2 cup light brown sugar
- 1 gallon vegetable stock
- 1 Tbsp black peppercorns
- 1/2 Tbsp allspice berries
- 1/2 Tbsp candied ginger
- 1 gallon iced water
- For the aromatics:
- 1 red apple, sliced
- 1/2 onion, sliced
- 1 cinnamon stick
- 1 cup water
- 4 sprigs rosemary
- 6 leaves sage
- Canola oil

Creamy Pesto Gnocchi with Green Beans and Ricotta

Cook the gnocchi according to the package directions
- 1 lb gnocchi (refrigerated or frozen)
- Kosher salt and pepper
- 1/2 lb green beans, cut into 1/2 inch pieces (about 2 cups)
- 1 8 oz container of store-bought pesto (about 1 cup)
- 1/4 cup heavy cream
- 1/4 cup ricotta
Chicken Enchiladas

Combine green chilies, cream of chicken soup, green onions, sour cream, and chicken
- Optional:
- 10-20 flour tortillas
- 2 cans diced/chopped green chilies
- 2 cans (10-3/4 oz) cream of chicken soup
- 1 bunch of green onions, diced
- 16 oz sour cream
- 2-3 chicken breasts, cooked and shredded
- 8 oz Monterey Jack cheese
- 8 oz sharp cheddar cheese
- Mushrooms
- Olives
Beef Bourguignonne

- 2 lbs beef stew meat
- Salt
- Freshly ground black pepper
- 3 Tbsp butter
- 2 Tbsp flour
- 1-1/2 cups red wine
- 2 onions, coarsely chopped
- 1 tsp minced garlic
- 2 shallots, finely chopped
- 1 carrot, peeled and diced
- 1 bay leaf
- 1/2 tsp dried thyme (or 1 tsp fresh)
- 1 sprig fresh parsley, chopped
- 2 cups beef stock
- 1 Tbsp brandy
- 1/4 cup Madeira
- 1/2 lb mushrooms, quartered
