CHICKEN ADOBO phillipine version (Kriekenbeek's recipe)

recipe: Marinade ~ 2 lbs chicken pieces (your choice)for at least 3 hours or overnight
- Make/mix the marinade/sauce:
- 3 tbspn soy sauce (preferably Datu Puti, in Asian/Fiesta stores)
- 3 tbspn vinegar (preferably Datu Puti, in Asian/Fiesta stores)
- 3 cloves garlic (or more)
- 3 pieces dried bay leaves
- 1/2 tbspn white sugar (the secret ingredient???)
- 1/2 tbspn whole peppercorn
- 2 lbs chicken pieces (your choice)( they used blsl chicken thigh chunks)
French Toast with Maple-Apple Compote

1. Preheat oven to 250°. Place wire rack on a baking sheet and place in oven
- Compote:
- Cooking spray
- 1 tablespoon butter
- 3 cups sliced peeled Pink Lady apples (about 1 1/2 pounds)
- 1/4 cup maple syrup
- 1/2 teaspoon ground cinnamon
- French toast:
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
- 1 cup 2% reduced-fat milk
- 2 teaspoons vanilla extract
- 1/8 teaspoon salt
- 4 large eggs, lightly beaten
- 12 (1-ounce) slices challah bread
- 4 teaspoons butter
- Powdered sugar (optional)

Directions Heat a large skillet over medium high heat
- 1 tablespoon extra-virgin olive oil, 1 turn of the pan
- 1 1/4 pounds ground beef sirloin
- 1/4 cup brown sugar
- 2 teaspoons to 1 tablespoon steak seasoning blend, such as McCormick brand Montreal Seasoning
- 1 medium onion, chopped
- 1 small red bell pepper, chopped
- 1 tablespoon red wine vinegar
- 1 tablespoon Worcestershire sauce
- 2 cups tomato sauce
- 2 tablespoons tomato paste
- 4 crusty rolls, split, toasted, and lightly buttered
- Garnish: sliced ripe tomatoes, pickles, Deviled Potato Salad, recipe follows

Directions Combine all ingredients and shape into four patties
- 1 pound ground pork
- 1 tablespoon cooking fat
- 2 teaspoons sage
- 1 1/2 teaspoons ground black pepper
- 1 teaspoon sea salt
- 1 teaspoon rosemary
- 1 teaspoon thyme
- 3/4 teaspoon garlic powder
- 1/4 teaspoon ground cinnamon

In a medium mixing bowl, combine the pork, onion, garlic, thyme, sage, cayenne, black pepper, and salt
- ½ pound extra-lean ground pork or pork tenderloin, ground (chicken or turkey)
- 1 tablespoon minced red onion
- 1 ½ teaspoons minced garlic
- ½ teaspoon dried thyme
- ¼ teaspoon ground sage

- 6 slices bacon
- 2 pounds ground beef chuck
- 1 large onion, chopped

- Kosher salt
- 1/4 cup chili powder
- 1 tablespoon ground cumin
- 2 teaspoons paprika
- 2 teaspoons dried oregano
- 2 tablespoons tomato paste
- 1 12-ounce bottle amber beer
- 2 tablespoons unsweetened cocoa powder
- 1 28-ounce can whole plum tomatoes, crushed by hand
- 1 1/2 cups low-sodium beef broth, plus more if needed
- 2 15-ounce cans black beans, drained and rinsed
- 1 tablespoon hot sauce
- Shredded cheddar cheese, sliced scallions and/or sour cream, for topping (optional)

- 1 lb Tropical Traditions Grass Fed Ground Beef
- 1 (14oz) can tomato sauce

- 1 tablespoon dried basil
- 1 tablespoon dried thyme
- salt and pepper, to taste
