Pasta Fagioli

slow cooker crock pot version
- 2 lbs ground beef
- 1 onion, chopped
- 3 carrots, chopped
- 4 stalks celery, chopped
- 2 (28 ounce) cans diced tomatoes, undrained
- 1 (16 ounce) can red kidney beans, drained
- 1 (16 ounce) can white kidney beans, drained
- 3 (10 ounce) cans beef stock
- 3 teaspoons oregano
- 2 teaspoons pepper
- 5 teaspoons parsley
- 1 teaspoon Tabasco sauce (optional)
- 1 (20 ounce) jar spaghetti sauce
- 8 ounces pasta Directions: 1 Brown beef in a skillet. 2 Drain fat from beef and add to crock pot with everything except pasta. 3 Cook on low 7-8 hours or high 4-5 hours. 4 During last 30 min on high or 1 hour on low, add pasta.
Egg Muffins

Preheat oven to 375 F. Use regular or silicone muffin pan, 12 muffin size
- 15 eggs (for silicone muffin pans, use 12 eggs for metal muffin tins or individual silicone cups. You can use less egg yolks and more egg white if you prefer.)
- 1-2 tsp. Spike Seasoning
- 1-2 cups grated low fat cheese (I like sharp cheddar or a blend of cheddar/Jack cheese, use less cheese if using meat)
- Optional, but highly recommended, 3 green onions diced small.
- Optional: chopped veggies such as blanched broccoli, red pepper, zucchini, mushrooms, etc. (Using veggies will reduce the fat content)
- Optional: diced Canadian bacon, lean ham, or crumbled cooked turkey sausage
Kickin' Crock Pot Chili

The entire batch yields approximately 10 cups
- 2 1/2 lbs. Lean Ground Beef
- 1 Medium Red Onion
- 3 Large Ribs of Celery
- 4 Tbs Minced Garlic
- 1 Can Tomato Paste
- 1 Can Rotel (or any variety of tomatoes and green chilies)
- 1 Can Stewed Tomatoes ( I used S&W stewed tomatoes seasoned with mild chili and Mexican seasonings)
- 1/4 Cup Jalapeno Slices
- 2 Tbs. Worcestershire Sauce
- 4 Tbs. Chili Powder
- 2 1/2 Tbs. Cumin - Mounded
- 1/2 tsp. Cayenne
- 1 tsp. Garlic Powder
- 1 tsp. Oregano
- 1 tsp. Black Pepper
- 2 tsp. Salt
- 1 tsp. Onion Salt

- 1 (14 ounce) can sweetened condensed milk
- 1 (8 ounce) tub cool whip

- 1 cup Finely Chopped Pecans
- 1/3 cups Evaporated Milk
- 1/2 cups Evaporated Milk (additional)
- 1/2 cups Butter, Melted
- 60 whole Caramels, Unwrapped
- 1/3 cups Semi-Sweet Chocolate Chips
- 1/4 cups Powdered Sugar
