Fresh Strawberry Upside Down Cake

Preheat an oven to 350 degrees F (175 degrees C)
- 2 cups crushed fresh strawberries
- 1 (6 ounce) package strawberry flavored gelatin mix
- 3 cups miniature marshmallows
- 1 (18 ounce) package yellow cake mix, batter prepared as directed on package

- 1 pound hot sausage
- 1 pound hamburger
- 1 pound Velveeta cheese, cut into cubes
- 2 packages dinner rolls, slice entire package horizontally
Chicken Rollatini Stuffed with Zucchini and Mozzarella

Try this delicious Chicken Rollatini Stuffed with Zucchini and Mozzarella recipe for dinner
- 1 teaspoon olive oil
- 4 cloves garlic, chopped
- 1 1/2 cups medium zucchini, shredded
- 1/4 cup and 2 teaspoon Romano cheese (or parmesan)
- 3 ounces part skim shredded mozzarella
- salt and pepper to taste
- 8 thin chicken cutlets, 3 ounces each
- 1/2 cup Italian seasoned breadcrumbs
- 1 lemon, juice of
- 1 tablespoon olive oil
- salt and fresh pepper
- olive oil non-stick spray
Grilled 7-UP Chicken

Mix all ingredients together in a Ziploc bag
- 1/2 cup soy sauce
- 1/2 tsp Horseradish (it tastes okay without this, but I highly recommend using it! Adds the perfect amount of zip!!)
- 1 (12 oz) can of lemon-lime soda pop (not diet)
- 1/4 cup vegetable oil
Spicy Sausage and Caramelized Onion Frittata

If cut into 8 servings – 4
- 1 lb Hot Sausage (I use Jimmy Dean)
- 1 Medium onion
- 2 Tbs Butter
- 2 Tbs Minced garlic (I used jarred and not fresh)
- 10 Eggs
- 1 Cup Shredded Medium Cheddar
- 2/3 Cup Grated Parmesan
- 2 cans of mushrooms (6.5 oz cans) I normally use fresh mushrooms
- 3 Tbs Tomato Paste
- Tapatio (or hot sauce of your choice)
- Salt and Pepper
Basil Chicken and Pasta

Directions In a large pot with boiling salted water cook rotini pasta until al dente
- 1 (12 ounce) package rotini pasta
- 2 tablespoons butter
- 1 pound skinless, boneless chicken breast halves - cut into 1/2 inch cubes
- 3 cloves garlic, minced
- 1/2 teaspoon ground black pepper
- 2 teaspoons dried basil
- 1 cup heavy cream
- 1/4 cup grated Parmesan cheese
Broccoli Cheese Soup

Melt butter in a pot over medium heat, then add the onions
- 1 whole Onion, Diced
- 1 stick 1/2 Cup Butter
- 1/3 cup Flour
- 4 cups Whole Milk
- 2 cups Half-and-half
- 4 heads Broccoli Cut Into Florets
- 1 pinch Nutmeg
- 3 cups Grated Cheese (mild Cheddar, Sharp Cheddar, Jack, Etc.)
- Small Dash Of Salt (more If Needed)
- Freshly Ground Black Pepper
- Splash Of Chicken Broth If Needed For Thinning
Breakfast Casserole with Potatoes, Ham, Eggs and Cheese

1. Spray a 9×13 pan with cooking spray
- Gravy:
- 24 oz frozen shredded potatoes
- salt and pepper
- 12 eggs
- 2 C half and half
- 1 t season salt
- 1 1/2 C cheddar cheese, grated
- 1 1/2 C pepper jack cheese, grated
- 2 C chopped ham (you can substitute cooked sausage)
- 1 can cream of mushroom soup
- 1/3 C sour cream
- 4-6 T milk
- salt and pepper

Potato Soup

Combine potatoes, celery, onions, carrots, ham, water & broth in a large pot
- 3 1/2 cups peeled, diced potatoes
- 1/3 cup diced celery
- 1/3 cup diced onion
- 1/3 cup diced carrots
- 3/4 cup cooked, diced ham
- 3 1/4 cup water (or substitute a can of chicken broth for some of the water)
- salt and pepper to taste
- 5 Tbsp. butter
- 5 Tbsp. flour
- 2 cups milk
