  • 1 Large Avocado, cubed
  • Optional:

  • For Lemon Pepper Chicken
  • 2 large chicken breasts
  • Juice of 1 fresh lemon
  • 1 Tbsp avocado or olive oil
  • Zest not rind of 1 fresh lemon
  • Sea salt to taste
  • Freshly ground black pepper to taste (I use a lot of pepper for these!)
  • Avocado Ranch Dressing:
  • 1 cup plain Greek yogurt
  • 1 medium avocado, peeled and cored
  • 2 Tbsps fresh lime juice
  • 1 clove garlic, minced
  • 1 Tbsp chopped fresh parsley
  • 2 tsp chopped fresh dill
  • 2 tsp chopped fresh chives
  • 1/2 tsp onion powder
