California Pizza Kitchen's Chopped Salad

For salad, toss together the ingredients in a large bowl and chill in your refrigerator
- 1 teaspoon garlic, minced
- 2 teaspoons shallots, minced
- 2 tablespoons Dijon mustard
- 1 1/2 teaspoons dried oregano
- 2 teaspoons dried parsley
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon kosher salt
- 1/4 cup red wine vinegar
- 1 1/3 cups olive oil, mild flavored
- 3 tablespoons parmesan cheese, grated
- Salad
- 1/2 head iceberg lettuce, chopped into 1/8 inch wide strips
- 1/2 head romaine lettuce, chopped into 1/8 inch wide strips
- 12 leaves basil, chopped into fine strips
- 3 cups mozzarella cheese, shredded
- 1 cup garbanzo beans
- 4 cups tomatoes, seeded and diced
- 3 cups turkey breast, diced
- 1/2 cup salami, cut into thin strips
- 2 tablespoons scallions, chopped
Crispy Parmesan Chicken Strips

- 1 1/2 cups season croutons, crushed
- 1 1/2 oz. fresh parmesan cheese, grated
- 1 tsp. parsley
- 1/4 tsp. garlic salt
- 2 egg whites
- 1 Tbsp. water
- 1 lb. boneless,skinless chicken breast halves, cut into 1-inch pieces (about 3 breast halves)
- 1/4 cup prepared lite ranch dressing

In a large salad bowl blend together chicken, celery, onions, salt, lemon juice, and grapes
- 3 cups cooked chicken, diced
- 1 cup celery, thinly sliced
- 1/2 cup onion, minced
- 1 teaspoon salt
- 2 tablespoons lemon juice
- 1 cup seedless grapes, sliced
- 1/4 cup mayonnaise
- 1 (11 ounce) cans mandarin oranges, drained
- 1/2 cup toasted almond
- romaine lettuce or boston lettuce
Cranberry Pecan Salad

- 1-2 cup salad greens
- 2 tablespoons crumbled feta cheese
- 2 tablespoons dried cranberries
- 2 tablespoons chopped pecans
- olive oil and vinegar dressing or raspberry vinaigrette dressing

- 1 lb of ground beef
- 1/2 teaspoon of minced garlic
- 1/3 cup of ketchup
- 4 Tbsp. of chopped onion
- 1/2 teaspoon salt
- 1 1/4 cup of water
- 3 Tbsp. butter
- 1 Tbsp. cider vinegar
- 1 1/4 cup mashed potato flakes
- 3/4 cup of lays potato chips, crushed
- 1 3 oz package of cream cheese, cubed
- 1 12 oz tube of refrigerated buttermilk biscuits

- Coffee Syrup
- 2 shots very strong espresso
- 1/4 cup Kahlua liquor
- 1 tbsp sugar
- Mascarpone Cream
- 2 cups heavy fat-free whipping cream
- 1 cup mascarpone cheese, room temperature
- 2 tbsp sugar
- Finishing the Trifle
- 18 ladyfinger cookies
- 6 oz dark chocolate shavings
- Cocoa Powder, for dusting (optional)
- Coffee Syrup
- 1 .In a medium saucepan combine espresso, Kahlua and sugar
- 2 .Simmer over medium heat, stirring occasionally, for 8-10 minutes
- 3 .Remove from heat and let cool
- Mascarpone Cream
- 1 .In the bowl of a stand mixer whip cream until very stiff peaks form
- 2 .Add in cheese and sugar and whip until smooth
Broccoli Salad 2

Mix salad ingredients together and add mixed dressing over top
- Dressing:
- 1 large bunch broccoli florets
- 2 cups grated mozzarella
- 1/2 lb. bacon, fried and crumbled
- 1 small red onion
- 1 cup margarine
- 2 Tbsp. vinegar
- 1/4 cup sugar
Cabbage Beef Bake

Preheat oven to 350. Lightly grease/spray a deep 13 x 9 baking dish
- 1 small cabbage, shredded
- 1 1/2 lbs lean ground beef, can use lean ground turkey
- 1 large onion, chopped
- 1/2 cup chopped red bell pepper
- 1 (15 ounce) cans diced tomatoes, undrained
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon sugar
- 1 teaspoon caraway seed
- 1 (8 ounce) cans tomato sauce
- 1 cup reduced-fat sour cream
- 1 cup shredded cheese of choice
Green and White Veggie Salad

Place the onion in food processor, process till finely chopped
- 1 cup salad dressing
- 1/2 cup sour cream
- 1 Tbsp. vinegar
- 1 Tbsp. sugar
- 1 small onion
- 1/8 tsp. worcestershire sauce
- dash hot sauce
- salt and pepper
- 1 head cauliflower florets
- 1 bunch broccoli florets
