- 1 cup unsweetened applesauce
- 2 cups 100% whole wheat pastry flour (Bob's Red Mill)
- 1/2 cup sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups blueberries (about 6.5 oz)
- 1 large egg, beaten
- 1 tsp vanilla
- 2 tbsp melted butter or margarine
VELVEETA Tex-Mex Beef and Potatoes

HEAT oven to 350°F. BROWN meat with peppers and onions in large skillet; drain

- 1 red pepper, chopped
- 1 onion, chopped

- 1/2 cup water
- 4 cups frozen Southern-style hash browns (cubed not shredded variety)

Taco Casserole

Cook meat and onion until done, then drain
- 1 lb cooked hamburger
- 2 bags cooked mixed vegies
- 1 cooked onion, cut up
- 1 pkg taco seasoning
- 1 cup water
- 1 lg jar salsa (mild or hot)
- Nacho chips (I crush mine)
- Shredded cheese
Artichoke Dip

- 8 oz. cream cheese
- 1 can (14 oz.) artichoke hearts, drained & chopped
- 2 tsp butter, melted
- 1 clove garlic
- 1/4 c. 100% grated parmesean cheese
Herb & Cheese-Stuffed Burgers

In a small bowl, combine the cheddar cheese, cream cheese, parsley and 1 teaspoon mustard; set aside
- 1/4 cup shredded cheddar cheese
- 2 tablespoons cream cheese, softened
- 2 tablespoons minced fresh parsley
- 3 teaspoons Dijon mustard, divided
- 2 green onions, thinly sliced
- 3 tablespoons dry bread crumbs
- 2 tablespoons ketchup
- 1/2 teaspoon salt
- 1/2 teaspoon dried rosemary, crushed
- 1/4 teaspoon dried sage leaves
- 1 pound lean ground beef (90% lean)
- 4 hard rolls, split
- Lettuce leaves and tomato slices, optional

- 3/4 cup brown sugar (Splenda would work too)
- 1 tsp vanilla
- 1/8 tsp cinnamon
- 1/8 tsp pumpkin pie spice (or more to taste)
- 6 oz fat free Greek yogurt (I used Chiobani)
- 8 oz cool whip free
- cut up apples to dip (extra points)
Hot Tamale Casserole

In a small heavy saucepan, bring the water, salt and cayenne to a boil
- 2 cups water
- 1/4 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 1/2 cup cornmeal
- 1-1/2 pounds lean ground beef (90% lean)
- 1 large onion, chopped
- 1 medium green pepper, chopped
- 2 garlic cloves, minced
- 1 can (16 ounces) kidney beans, rinsed and drained
- 1 can (10 ounces) enchilada sauce
- 1 can (4 ounces) chopped green chilies
- 1 can (2-1/4 ounces) sliced ripe olives, drained
- 2 teaspoons chili powder
- 2 teaspoons minced fresh cilantro
- 3/4 cup shredded cheddar cheese

Preheat oven to 375. Beat eggs, milk and sour cream in large bowl with wire whisk until well blended

- 1 c. milk
- 1/2 c. sour cream
- 1 (10 oz) pkg frozen chopped broccoli, thawed & drained
- 1 (6 oz) pkg package Stove Top Stuffing Mix, Chicken
- 9 oz. smoked ham, chopped
- 1 c. shredded cheddar cheese

- 1 sheet refrigerated pie pastry
- 3/4 pound ground beef
- 2 plum tomatoes, seeded and chopped
- 1 medium onion, chopped
- 1/2 cup dill pickle relish
- 1/2 cup crumbled cooked bacon
- 5 eggs
- 1 cup heavy whipping cream
- 1/2 cup 2% milk
- 2 teaspoons prepared mustard
- 1 teaspoon hot pepper sauce
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
