Adobo Pork Tacos with Grilled Pineapple

1. Arrange slices of pork on a cutting board of smooth countertop between layers of plastic wrap
- Taco filling:
- 4 lb. boneless, trimmed pork loin, cut in half-inch slices
- 1 medium white onion, chopped
- 2 ancho and 2 guajillo chiles, toasted, stemmed, and seeded (I've used red and green jalepenos.)
- 1 T. puree of chipotle chiles in adobo
- 6 cloves garlic
- 1-1/2 oz. achiote paste (I've used 1 T. achiote paste.)
- 1/8 c. apple cider vinegar or rice wine vinegar
- 2 T. honey
- 1/4 c. chopped fresh cilantro
- 1 T. vegetable oil
- 4 cloves
- 1/4 c. water
- 1 t. salt
- 1/2 t. freshly ground black pepper
- 1 fresh ripe pineapple, peeled, cored, and cut lengthwise in half-inch-thick slices, then lightly brush with vegetable oil
- Tacos:

- 2 (6.5 ounce) cans [370 g.] canned tomato sauce (Passierten Tomaten)
- 1/2 cup water
- 2 T sugar
- 1 1/2 t dried basil leaves
- 1/2 t fennel seeds
- 1 t Italian seasoning
- 1 T salt
- 1/4 t ground black pepper
- 4 T chopped fresh parsley
- 20 no-cook lasagna noodles
- 16 ounces [500 g] ricotta cheese
- 1 egg
- 1/2 t salt
- 3/4 pound [400 g.] mozzarella cheese, shredded
- 1 c grated Parmesan cheese

- 1 1/3 cups all-purpose flour, plus more for hot dogs
- 3 tablespoons sugar
- 2 teaspoons baking powder
- Coarse salt and freshly ground pepper
- 4 large eggs, lightly beaten
- 1 1/2 cups buttermilk, plus more to adjust texture of batter
- Vegetable or peanut oil, for frying (about 2 quarts -- or less if using a smaller pan)

Simple veggie pasta

(1) Chop up all of the veggies but the carrots and mushrooms
- Ingredients:
- 5 large tomatoes
- 1 yellow squash
- 1 zucchini
- 1/2 red onion
- 1 green bell pepper
- 1 package sliced mushrooms [Optional]
- 2 cloves minced garlic
- 1 carrot
- Small can (about 6 oz.) tomato paste
- Whole wheat or whole grain rotini [You can use other pasta, but the sauce really sticks to the rotini shape the best.]
- A tiny bit of salt to taste.
Vegan Nigerian Okra Stew with Cassava Fufu

- Okra stew:
- 500 g. okra
- 50 g. dried shitake mushrooms
- 30 g. dried chanterelle/pfefferling
- 250 g. frozen spinach
- 1/2 onion
- 13 g. dried seaweed
- 2 T. (Esslöffel) vegan bouillon
- Olive oil
- Salt and pepper to taste
- Cassava fufu:
- 1.6 kg cassava/yuca

- 1 cup unsweetened vanilla almond milk
- 1 teaspoon apple cider vinegar
- 1 1/4 cups all-purpose flour
- 2 tablespoons cornstarch
- 3/4 teaspoon baking powder
