Crisp Goat-Cheese Salad

1. (Omit this step if not using potatoes
- 1/2 c. olive oil, plus more for baking sheet
- 3 large red potatoes (about 1 lb.) [optional, I omit]
- 1 large egg
- salt and pepper
- 1 +1/2 c. plain breadcrumbs or crushed corn flakes
- 1 12 oz. log fresh goat cheese or fresh Mexican cheese
- 1 T. white-wine vinegar or Balsamic vinegar
- 1 T. grainy of Dijon mustard
- 8 oz. mesclun or mixed salad greens
- Lime juice
- Oregano
- Fresh cracked pepper
- Rosemary
Warm Beer and Cheddar Dip

A grown up cheese dip. http://www
- 2 Tbs. unsalted butter
- 3 Tbs. all-purpose flour
- 1/2 cup milk
- 3/4 cup ale or darker beer [I used Guinness]
- 1 tsp. dry mustard, such as Colman’s [I used prepared mustard, specifically Köstrizter Schwarzbier Senf.]
- 2 tsp. Worcestershire sauce
- Hot sauce, to taste
- 12 oz. sharp cheddar cheese, grated [If you live in a country where cheddar is expensive, you can replace half of this with gouda.]
- Kosher salt and freshly ground pepper, to taste
- Toast points, crostini and crudités for serving
Apple Butter Ice Cream

1. In a medium mixing bowl, beat the sugar into the eggs and egg yolks until thickened and pale yellow
- 1 c. sugar
- 2 large eggs
- 2 large egg yolks
- 2 t. all-purpose flour
- 2 c. light cream
- 1 +1/2 c. unsweetened, unspiced apple butter
- 1/2 t. ground cinnamon
- 1/2 t. vanilla extract
Mon-Nyin Chin (Fermented Mustard Green Pickles)

Burmese mustard greens
- 1 bunch of Chinese mustard greens, about 1.5 lbs. (0.68 oz.)
- 3 carrots, sliced thin diagonally, about 3 c.
- 1/2 lb. shallots, peeled
- 2 t. dried hot red chili flakes
- 2 t. salt
- 2 t. brown sugar
- 1/2 t. ground turmeric
- 1 c. beer

1. Beat together ingredients until just smooth
- 1 c. sifted all-purpose flour
- 1/2 t. salt
- 1 c. milk

Bulghur and Veggies

Hearty, low fat dish
- 10 oz. can reduced sodium chicken broth (Vegetable broth can be used instead.) [~ 325 mL]
- 10 oz. can reduced sodium beef broth (Vegetable broth can be used instead.) [~ 325 mL]
- 14.5 oz. can diced tomatoes with Italian herbs (or 3 - 4 diced roma tomatoes, 6 - 10 leaves fresh basil, chopped, and 2 cloves minced garlic) [400 g. can]
- 1 large white onion, diced
- 1 jalepeno, finely diced
- 2 cloves garlic, minced
- 2 bunches fresh spinach, rinsed and torn into pieces (or use a package of frozen or canned spinach)
- 2 cups dried bulghur/bulgur (I've also used Russian гречка/buckwheat groats.) [~ 500 mL]
- Shredded cheese (optional)
- Cholula hot sauce (optional)
Easy Slow Cooker Baked Beans

- 1 lb / 0.5 kg fresh spinach, or one 10-oz/300g. package frozen chopped spinach
- 1 lb / 0.5 kg fresh mustard, kale, collard or fresh beet greens , or one 10-oz/300g. package frozen chopped greens
