  • 1 15 oz. can pumpkin purée
  • 1 vanilla bean, split *
  • 2 packets gelatin powder
  • 6 T. cold water
  • Sweet (not savory) sweet potato chips
  • * alternatively, 1 tsp vanilla extract

  • 7 cups water
  • 1/2 pound dry chickpeas, sorted and rinsed
  • 1/2 pound dry black beans, sorted and rinsed
  • 1/4 teaspoon baking soda
  • 2 cloves garlic, minced
  • 2 teaspoons kosher salt
  • Juice of one lime (~1/3 c.)
  • 1/4 cup water
  • 1/6 cup tahini, stirred well
  • 1/6 cup peanut butter, stirred well (or, even better, pumpkin seed butter)
  • 1/4 cup extra-virgin olive oil, plus extra for serving
