Pumpkin Panna Cotta

When you are feeling a crust-less holiday dessert
- 1 quart heavy cream
- ½ cup sugar
- 1.5 tsp ground cinnamon
- 1 tsp ground cloves
- 1 tsp ground allspice
- 1/2 tsp ground ginger
- 1 15 oz. can pumpkin purée
- 1 vanilla bean, split *
- 2 packets gelatin powder
- 6 T. cold water
- Sweet (not savory) sweet potato chips
- * alternatively, 1 tsp vanilla extract
Tex Mex Hummus

I took Alton Brown's hummus recipe and gave it a Tex Mex twist
- 7 cups water
- 1/2 pound dry chickpeas, sorted and rinsed
- 1/2 pound dry black beans, sorted and rinsed
- 1/4 teaspoon baking soda
- 2 cloves garlic, minced
- 2 teaspoons kosher salt
- Juice of one lime (~1/3 c.)
- 1/4 cup water
- 1/6 cup tahini, stirred well
- 1/6 cup peanut butter, stirred well (or, even better, pumpkin seed butter)
- 1/4 cup extra-virgin olive oil, plus extra for serving
German-Style Red Cabbage

- 2/3 cup sugar

- 1 medium yellow onion, quartered
- 8 cloves garlic
- 1 celery rib, cut into quarters
- 2 teaspoons black peppercorns
- 8 whole cloves (or 1/4 teaspoon ground cloves)
- 8 allspice berries (or 1/4 teaspoon ground allspice)
- 1 leafy stem of cilantro
- 1 bay leaf
- 2 teaspoons kosher salt, plus more to taste
- SALSA VERDE:
- 1/2 pound fresh tomatillos, husked, or 1 (10-ounce) can of tomatillos
- 1/4 medium yellow onion, chopped
- 4 cloves garlic, chopped
- 2 jalapeños, seeds and stems removed, chopped
- 1/2 cup cilantro, chopped
