- 1 pound lump crabmeat
- 8 saltine crackers, crushed
- 1 egg

- TARTAR SAUCE:
- Ingredients
- 4 teaspoons white wine vinegar
- 1 tablespoon Dijon mustard
- 3 free-range egg yolks
- 2 1/4 cups vegetable oil
- 3 1/2 ounces capers, drained
- 2 1/2 ounces gherkins, chopped
- 1 3/4 ounces fresh flat-leaf parsley, chopped
- CHIPS:
- 8 large potatoes
- Salt
- Vegetable oil, for deep-frying
- PEA PUREE:
- 7 tablespoons chicken stock
- 1 ounce butter
- 1 shallot, finely chopped
- Sea salt
- 14 ounces frozen peas, defrosted
- 1 tablespoon sugar
- 10 fresh mint leaves
- Freshly ground black pepper
- BATTERED FISH:
- 2 free-range egg whites
- 12 ounces self-raising flour, plus extra for dusting

Beet Burger with Citrus-Caper Aioli

- Citrus-Caper Aioli:
- Ingredients
- 4 tablespoons grapeseed oil
- 1 medium yellow onion, minced
- Kosher salt and freshly cracked black pepper
- 2 cups cooked brown rice, cooled (a microwaveable bag works great)
- 1 cup roughly chopped peeled raw red beets (about 1 large beet)
- 1 cup walnuts
- 1/2 cup yellow raisins
- 1/2 teaspoon granulated garlic
- 2 large eggs
- Bibb lettuce leaves, for serving
- Citrus-Caper Aioli, recipe follows
- 1/2 cup mayonnaise
- 2 tablespoon capers
- 1 tablespoon honey mustard
- 1 teaspoon orange zest plus 2 tablespoons fresh orange juice
