Avacado, Tomato & Cucumber Salad

Mix all ingredients first and add the avacado when your ready to eat it
- 4 cups avocados, diced medium
- 2 cups grape tomatoes or 2 cups cherry tomatoes
- 2 cups cucumbers, peeled and diced medium
- 1 cup red onion, diced small
- 4 tablespoons fresh cilantro, chopped
- 2 teaspoons fresh garlic, minced
- 2 tablespoons lime juice
- 1/4 cup olive oil
- salt
- fresh black pepper
- Lettuce (if you want)

- 1 Can (20 oz.) Dole Crushed Pineapple, undrained
- 1 Package (4-serving size) Jello Vanilla flavor instant pudding and pie filling

Traditional Middle Eastern salad
- 1 cup fine grain Bulgur wheat, soaked overnight in 3 cups water
- 3/4 cup olive oil (Note, original recipe called for 1 cup. I found this to be too much)
- 1/3 cup freshly squeezed lemon juice
- 2 bunches Italian flat parsley, stems removed, finely chopped
- 1 cup tomato, diced (with juice and seeds)
- 1/2 white onion, finely diced
- 1 bunch scallions, finely chopped
- 2 tablespoons finely chopped mint leaves
- Salt to taste
