- Meringue Ingredients:
- 1 Package Duncan Hines Deluxe II Lemon Supreme Cake Mix
- 1 Teaspoon Pure Lemon Extract
- 2 Packages (4-serving size) Royal Lemon pudding and pie filling mix
- Note: Cook the Lemon pudding first so it can cool while baking the cake.
- 4 Egg whites
- 1/2 Cup sugar
- 1 Teaspoon Cream of Tarter

Fish & Potato Chowder

Superb, quick and easy to make
- 5 Thick bacon slices (chopped)
- 1 Large white onion (diced)
- 2 Teaspoons kosher or sea salt
- 3/4 Teaspoon freshly ground black pepper
- 2 Tablespoons all-purpose Flour
- 2 Cups water
- 1-1/2 Pounds Fingerling potatoes (uncooked, not peeled & cut into 1/2" pieces)
- 1/3 Cup Half and Half
- 1-3/4 Cups milk
- 2 Pounds fresh cod (cut into 1" pieces) (or use white fish of your choice)
- Fresh chives
Portuguese Kale Soup

1. In a large soup pot over medium-high heat 2
- 1 Tablespoon olive oil
- 2 Cloves of garlic
- 2 Medium size onions (chopped)
- 1 Pound Linguico (sliced & slices halved)
- 5 Cups chicken broth
- 1 Pound fresh Kale (washed, stems discarded, shredded into small pieces)
- 1 Can Campbell's Bean with Bacon soup
- 1 Can water (use soup can)
- 1 Can White Northern Beans (rinse well)
- 3 Large Russett potatoes (cubed)
- Salt and pepper to taste

- 1/4 cup grated parmesan cfheese, plus more for topping
- 1/4 cup chopped fresh parsley
- 1 large egg, lightly be
- 1 clove garlic, grated
- Kosher salt and freshly ground pepper
- 2 tablespoons extra-virgin olive oil
- 2 carrots, diced
- 2 stalks celery, diced
- 1 quart low-sodium chicken broth
- 1 9-ounce package refrigeratedcheesetortellini
- 4 cups loosely packed baby spinach (about 3 ounces)

- For the Soup:
- 2 chicken breasts, cubed
- 1 lb small to medium shrimp, deveined with tails off
- 1 cup fresh spinach, torn into small pieces
- 1 cup mushroom, sliced
- 1 (8 ounce) can water chestnuts
- 1 teaspoon light brown sugar
- 1 tablespoon rice wine or 1 tablespoon dry sherry
- 1 tablespoon soy sauce
- 1 teaspoon finely chopped scallion
- 1 teaspoon finely chopped fresh ginger
- 6 cups chicken stock (I use 8 cups)
- For the Wontons
- 6 ounces ground pork
- 8 medium shrimp, shelled and ground
- 1 teaspoon light brown sugar
- 1 tablespoon rice wine or 1 tablespoon dry sherry
- 1 tablespoon soy sauce
- 1 teaspoon finely chopped scallion

- 24 wonton wrappers

Healthy snack: Calories per serving: 27 Fat: 2 grams Fiber: none Carbs: 1 gram Protein: 1 gram
- 2 cups grated zucchini ( about 1 medium)
- Squeeze out the excess water with a cloth or paper towels
- 1 egg
- 1/2 cup grated Parmesan Cheese
- 1/4 cup chopped cilantro
- Salt & pepper (if desired - not required as the cheese is salty enough)

- 1/2 Teaspoon salt
