I don’t like Buttercream frosting
- 1 Box confectioner’s sugar (16 oz)
- 1/2 Cup Crisco shortening
- 5 Tablespoons cold milk
- 1-1/2 Teaspoons vanilla extract (or Almond ... whatever flavor you prefer)
- 1/2 Jar Marshmallow Fluff (glass jar, not the bigger plastic container one)

Polish cabbage and beef casserole, a comfort food
- Medium size head of cabbage
- 2 1/2 pounds lean ground beef 90/10
- 1/2 pound cooked bacon, coarsely chopped
- 1 medium white onion
- 1/2 cup Italian flavored bread crumbs
- 1/2 to 3/4 3/4 cup cooked white rice
- 1 to 2 eggs
- 1 family sized and 1 (10-ounce) can of tomato soup
- Salt and pepper, to taste

- 2 Cups butter, softened
- 1 pkg (8 oz) cream cheese, softened
- 2 cups sugar
- 2 egg yolks
- 1 teaspoon vanilla extract
- 4-1/2 cups all purpose flour
- Frosting:
- 3-1/2 cups confectioners' sugar (divided)
- 3 tablespoons butter, softened
- 1 tablespoon shortening (Crisco)
- 1/2 teaspoon vanilla extract
- 3 to 4 tablespoons milk (divided)
Shrimp in Angel Hair Pasta Casserole

I have modified the original recipe by William Sarnecky, Chester, VA
- 1 tablespoon butter
- 2 Jumbo eggs
- 1 cup 1/2 and 1/2 (I used Hood Fat Free 1/2 & 1/2)
- 1 cup plain yogurt
- 1/2 cup (4 ounces) shredded Swiss Cheese
- 1/3 cup Feta Cheese (if someone doesn't like Feta, leave it out and add more Swiss)
- 1/3 cup chopped Parsley
- 1/4 cup chopped fresh Basil (or 1 teaspoon dried basil leaves, crushed)
- 1 teaspoon dried oregano leaves crushed
- 1 package (9 ounces) uncooked "Fresh" angel hair pasta. (I use 1 box angel hair cooked)
- 1 jar (16 ounces) mild, thick and chunky Salsa. (I use 1 jar Paul Newman (Medium) flavor)
- 1/2 cup (4 ounces) shredded Monterey Jack cheese
- 1 pound medium shrimp, peeled and deveined.
- Note: I use 1 pound of sea scallops and 1 pound frozen/thawed shrimp)
- Snow peas (optional)
- Plum tomatoes stuffed with cottage cheese (optional)
