Rum Balls

Crush wafers, finely. Mix the crumbs, nuts, cocoa, corn syrup and rum til all forms a firm paste
- 1/2 lb. vanilla wafers
- 1 cup nuts, chopped
- 2 tab. cocoa powder
- 1/2 cup light corn syrup
- 1/4 cup rum
- Confectioner's sugar
Copycat Bullfish Shrimp and Cheese grits

Bring 6 cups water and salt to boil in a heavy large saucepan
- 6 cups water
- 1/2 teas. salt
- 2 cups quick-cooking grits
- 1 cup grated sharp cheddar cheese
- Pinch of ground nutmeg
- Tabasco sauce, to taste
- 12 bacon slices, coarsely chopped
- 2 lbs. uncooked shrimp, peeled, deveined
- 1/2 lb. mushroom, sliced
- 2 cups sliced green onions
- 2 large garlic cloves, minced
- 2 1/2 tab. fresh lemon juice
- 1/4 cup chopped fresh parsley
Chicken Gumbo

Place flour in a 10 inch skillet
- 3/4 cup all-purpose flour
- 4 (6oz.) skinned chicken breast halves
- 2 quart water
- 1 cup chopped onion
- 1/2 cup chopped green pepper
- 1/2 cup chopped celery
- 3 cloves garlic, minced
- 1/2 cup sliced green onions
- 1/4 cup chopped parsley
- 2 dried whole bay leaves
- 2 teas. creole seasoning
- 1/2 teas salt
- 1 1/2 tab. Worcestershire sauce
- 1 teas. hot sauce
- 2 (10 oz. pkg.) frozen cut orka, thawed
- 3 1/3 cup hot cooked rice
Herb-Encrusted Roast Leg of Lamb with Garlic Roasted Baby Potatoes

In a bowl, whisk together the mustard, red wine and garlic
- 1/4 cup Dijon mustard
- 1/2 cup dry red wine
- 3 tab. minced garlic
- 1/2 cup olive oil
- 1/4 cup minced fresh mint
- 2 tab. finely chopped fresh rosemary
- 2 tab. chopped fresh thyme
- 1 teas. salt
- 1 teas. black pepper
- 1 (6 lbs.) leg of lamb, trimmed of fat
- 3 lbs. baby potatoes, rinse well and halved
- 1/4 cup extra-virgin olive oil
- 1 teas. fresh lemon juice
- 1 tab. minced garlic
- 1 teas. salt
- 1/2 teas. freshly ground black pepper
- 2 tab. chopped fresh parsley
- 1 tab. chopped fresh thyme

- 4 large zucchini, halved lengthwise
- 2 tsp. extra-virgin olive oil
- 4 links chicken sausage links, thinly slices
- 1/2 cup italian bread crumbs
- 3/4 cup mozzarella
- 1/2 cup fontina
- 2 cloves garlic, minced
- 1/4 cup chopped basil
Crockpot Chcken Cacciatore

- 2 Chicken breasts
- 26 oz. chunky vegetable-style spaghetti sauce
- 1 zucchini, cubed
- 1 cup chopped green pepper
- 1 cup chopped onion
Shrimp Scampi with Linguini

For the pasta, put a large pot of water on the stove to boil
- 1 lb. linguini
- 4 tab. butter
- 4 tab. extra-virgin olive oil, plu more for drizzling
- 1 large shallot, finely diced
- 5 garlic cloves, sliced
- Pinch red pepper flakes, opt.
- 20 large shrimp, about 1 lb., peeled and deveined, tail on
- Kosher salt and freshly ground black pepper
- 1/2 cup dry white wine
- 1 lemon, juiced
- 1/4 cup finely chopped parsley leaves
Crockpot Chicken with Artichokes

- Juice of lemon
- 3-4 cloves of garlic, minced

- 1 tab. of Corn starch
Skinny Alfredo

- 12 ounce whole wheat linguine
- 1 tab. extra-virgin olive oil
- 3 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 3/4 cup 1% milk
- 1/2 cup freshly grated Parmesan
- 2 tab. plain greek yogurt
- Freshly ground black pepper
- Pinch crushed red pepper flakes
