Crockpot Cranberry Pork Roast

Place all ingredients in crockpot
- 2 1/2 lb. Boneless Pork Roast
- 1 can of whole cranberry
- 1/4 cup honey
- 1/4 cup of dried minced onion

Thaw fish if frozen. In a small bowl combine remaining ingredients, except butter
- 4 fresh or frozen fish fillets
- 1/2 teas. onion powder
- 1/2 teas. garlic salt
- 1/2 teas. ground red pepper
- 1/2 teas. dried basil, crushed
- 1/4 teas. ground white pepper
- 1/4 teas. dried thyme, crushed
- 1/4 teas. pepper
- 1/8 teas. ground sage
- 1/4 cup butter, melted
Pad Thai with Beef

Soak rice noodles in a bowl of lukewarm water for 10 minutes
- 1/2 of a 14-oz. pkg. rice noodles
- 1 pd. ground beef (or ground turkey or chicken)
- 4 scallions, trimmed and cut into 1-inch pieces
- 2 cloves garlic, minced
- 3 tab. fresh lime juice, plus lime wedges, for garnish
- 2 tab. fish sauce
- 2 tab. rice vinegar
- 2 teas. sugar
- 2 large eggs
- 2/3 cup mung bean sprouts
- 1/2 cup chopped peanuts

- 1 1/2 lb. jumbo shrimp, with heads and shells
- 1 blue crab
- 1 onion, halved
- 2 bay leaves
- 5 sprigs fresh thyme
- 1/4 teas. cayenne
- 2 tab. Old Bay seasoning
- 2 lemons, halved and squeezed
- Gumbo:
- 1/2 cup unsalted butter
- 1/2 cup all-purpose flour
- 2 yellow onions, chopped
- 2 celery stalked, chopped
- 1 green pepper, chopped
- 4 garlic cloves, finely chopped
- 1 lb. okra, cut into 1/4 inch slices
- 1 teas. sea salt
- 1/2 teas. cayenne
- 1/2 teas. Old Bay seasoning
- 1 (15 oz.) can chopped tomatoes, drained
- 3 bay leaves
- 3 fresh thyme sprigs, leaves striped from the stem
- 2 quarts Shrimp stock
- 1 1/2 lb. reserved peeled shrimp

- Min, basil and coriander (cilantro)
- Lightly toasted cashew nuts or sesame seeds
- 4 tab. fresh lime juice
- 3 tab. olive oil
- 1 tab. sesame oil
- 1 tab. soy sauce
- Large pinch brown sugar
- 1 tab. ginger, peeled and finely chopped
- 1/2 clove of garlic, finely sliced
- 1 red chili, seeded and finely sliced
- 1 large handful fresh coriander (cilantro), basil, chopped

- 2 tab. thinly sliced fresh basil
- 1 tab. chopped fresh oregano
- 1 cup roughly chopped roasted chicken
- 1 cup roughly chopped marinated artichokes
- salt and freshly ground black pepper

- 3 lbs. Beef round, 1/2 inch strips.
- 1/2 cup of all-purpose flour
- 2 teas. salt
- 1/2 teas. pepper

- 2 med. onions, thinly sliced and separated into rings
- 2 cans (4 oz.) mushrooms drained or 1/2 pd. fresh, sliced
- 1 can (10 1/2 oz.) condensed beef broth
- 1/4 cup dry white wine (opt.)
- 1 1/2 cup sour cream
- 1/4 cup flour
- hot buttered noodles
- 3 tab. chopped parsley
