Chicken Tandoori

Preheat the broiler. Make shallow cuts in the chicken thighs with a sharp knife
- 8 skinless, boneless chicken thighs (about 2 lbs.)
- juice of 1 lemon
- 1/2 cup plus 2 tab. plain yogurt
- 1 tab. vegetable oil
- 1/2 small red onion, roughley chopped
- 3 garlic cloves, smashed
- 1 2-inch piece of ginger, peeled and roughly chopped
- 4 teas. tomato paste
- 2 teas. ground coriander
- 1 1/2 teas. ground cumin
- 1 3/4 teas hot paprika
- 2 tab. chopped fresh cilantro
- Cooked rice, for serving (opt.)
Chinese Recipes sauces

multiple sauces for Chinese
- Protein:
- 3/4 lb. flank steak, trimmed and thinly sliced against the grain
- 3/4 lb. pork tenderloin, thinly sliced
- 3/4 lb. med. or large shrimp, peeled and deveined
- 3/4 lb. skinless, boneless chicken breast or thighs, thinly sliced against the grain
- 12 oz. pkg. extra-firm tofu, cubed
- Marinate:
- Whisk 1 egg white
- 1 tab. Chinese rice wine or dry sherry
- 1 tab. cornstarch.
- Prep 3 cups Vegetables (in any combination):
- sliced carrots
- sliced celery
- sliced bell peppers
- 1-inch scallion pieces
- sliced onions or shallots
- quartered mushroom caps
- sliced bok choy or cabbage
- sliced leeks
- whole snow peas

- quartered plum tomatoes or halved cherry tomatoes

- Clear sauce:
- Mix 3/4 cup chicken broth

- Brown Sauce:
- Mix 1/2 cup chicken broth
- 1 tab. cornstarch

- Mix 3/4 cup chicken broth
- 1 tab. cornstarch

- Spicy Sauce:
- Mix 3/4 cup chicken broth
- 1 tab. cornstarch
- 2 tab. soy sauce

- 2 teas. Asian chili sauce
Barbecued Chinese Chicken Lettuce Wraps

Prepared the chicken; Whisk egg white, corn starch and rice wine in a bowl
- For Chicken:
- 1 large egg white
- 1 tab. cornstarch
- 1 tab. Chinese rice wine or dry sherry
- 1 1/2 lb. skinless, boneless chicken breast, diced
- For the Stir fry Sauce:
- 2 tab. oyster sauce
- 1 tab. hoisin sauce
- 1 tab. low-sodium soy sauce
- 1 tab. Chinese rice wine or dry sherry
- 1 teas. toasted sesame oil
- 2 teas. cornstarch
- For the Noodles:
- 2 bundles cellophane noodles
- Peanut oil, for frying
- For the Stir Fry:
- 4 tab. peanut oil
- 3 cloves garlic, minced
- 1 teas. minced peeled ginger
- 1 jalapeno pepper, seeded and minced
- 4 scallions; 2 minced, 2 cut into 1-inch pieces
- Kosher salt
- 1/4 teas. sugar
- 1/2 lb. shiitake mushrooms, stemmed and diced
- 3/4 cup diced water chestnuts
- Small lettuce leaver for serving
- Soy sauce, chili paste, and/or hot mustard, for serving.
Vietnamese Noodle Soup

Prepare the rice noodles as the label directs
- 8 oz. rice noodles
- 12 oz. lean beef sirloin, fat trimmed
- kosher salt and freshly ground black pepper
- 1 large onion, halved
- 1 4-inch piece ginger, unpeeled, halved
- 3 cups low-sodium beef broth
- 5 star anise pods
- 1 cinnamon stick
- 4 scallions
- 2 jalapeno peppers, preferably red and green
- 1/2 cup cilantro
- 2 to 4 tab. fish sauce
- 1 cup fresh bean sprouts
White Chocolate Pie

Bake pie crust in oven 50 for 5 minutes
- 1 9inch graham cracker crust
- 1 can Eagle brand Sweetened condensed milk
- 1 cup water less 2 tab.
- 1 white chocolate pudding
- 1 8oz. cool whip mix, 1/2 to be mixed in pie, 1/2 on top of pie
Warm Brussels Sprouts Slaw with Lemon and Hazelnuts

Halve Brussels sprouts lengthwise and the thinly slice crosswise, discarding the ends
- 1 lb. Brussels sprouts
- 2 tab. butter
- 2 tab. olive oil
- 2 tab. fresh lemon juice
- 2 shallots, chopped
- 1/4 cup of chopped toasted hazelnuts
- salt
- pepper
Chicken Divan

Cook vegetables and arrange crosswise in baking dish dish
- 2-10oz pkg. Frozen Broccoli
- 1/4 cup butter
- 1/3 cup all-purpose Flour
- 1/8 teas. ground nutmeg
- 1 cup milk
- 1 cup chicken Broth
- 1/4 cup white wine
- 1/3 cup grate Swiss cheese
- 10 oz. sliced cooked chicken
- 1/4 cup Parmesan cheese
