Crab-stuffed Mushrooms

Remove and chop mushroom stems;set mushroom caps aside
- 1 1/2 lbs. very large fresh mushrooms
- 3 tab. butter or margaine
- 1/2 cup chopped onion
- 1 garlic cloves, minced
- 1/2 cup soft breadcrumbs
- 1/4 cup chopped fresh parsley
- 2 tab. dry sherry
- 1/2 teas. Worcestershire sauce
- 1/2 teas. ground red pepper
- 1/4 cup mayo
- 2 to 3 tab. grated Pamresan cheese
- 8 oz. fresh lump crabmeat, drained
- 2 tab. butter, melted
Beef Borguignonne

Preheat the oven to 325. heat a 6 to 8 quart Dutch oven over med
- 6 strips thick-cut bacon, chopped
- 2 1/2 lbs. flat-iron or tri-tip beef, cut into 1 1/2-inch cubes
- kosher salt and freshly ground black pepper
- 2 med. carrots, diced
- 2 med. onions, diced
- 1 sprig fresh thym
- 1 bay leaf
- 2 garlic cloves
- 1 sprig fresh parsley, plus more for garnish
- 1 4-inch piece celery stalk
- 3 tab. all-purpose flour
- 1 tab. tomato pase
- 1/2 cup brandy
- 2 cups burgundy, cotes du rhone or other dry red wine
- 2 cups beef broth
- 2 tab. unsalted butter
- 3/4 cup pearl onions, peeled
- 1 teas. sugar
- 1 cup quartered button mushrooms
Koren Rice Bowl

Prepare rice; Combine 2 cups water and rice in a medium, lidded saucepan
- 1 1/2 cups sushi rice
- 1/4 cup rice vinegar
- 3 tab. low-sodium soy sauce
- 1 tab. peeled minced fresh ginger
- 2 cloves garlic, minced
- 1 tab. cornstarch
- 2 teas. cornstarch
- 2 teas. chili-garlic paste (such as Sriracha)
- 1 zucchini, cut into matchsticks
- 2 cups sthitake mushroom cpas (1/4 pd.), thinly sliced
- 1 cup shredded carrots
- 1 pd. ground beef

Grilled Eggplant, Proscuitto and Mozzzarella Roulades

Preheat the grill Season both sides of the eggplant slices with olive oil, salt and pepper
- 12 slices of eggplant (about 1/4 inch thick)
- Drizzle olive oil
- salt Freshly ground black pepper
- 12 slices of Proscuitto ham
- 12 slices of fresh Mozzarella, about 1/8 inch thick
- 1 small head of radicchio lettuce
- Drizzle of extra virgin olive oil

Beef Tagine

Heat oil in a large, lidded nonstick skillet over med-high heat
- 2 teas. vegetable oil
- 1 med. onion, peeled, trimmed, halved and sliced
- 2 med. carrots, peeled and cut into coins
- 1 pd. of ground beef (you can sub.ground turkey, or chicken)
- 2 teas. ground cinnamon
- 1 teas. each ground ginger and cumin
- 1/4 teas. each salt and pepper
- 1 cup low-sodium beef broth
- 1 tab. all-purpose flour
- 1 can of chickpeas, drained and rinse
- 1/2 cup dried apricots, chopped
- 1/2 cup golden raisins
- 1 cup couscous
- 1/4 cup cilantro, chopped
Grilled Fish with Buttery Lemon Parsley

Preheat grill to med-high heat
- 6 tab. yogurt-based diet margarine
- 3 tab. finely chopped parsley
- 1 teas. grated lemon zest
- 1/2 teas. salt
- 1/2 teas. dried rosemary leaves
- 6 (6oz. each) fish fillets, such as grouper, snapper, or any lean white fish
- Nonstick cooking spray
- 3 med. lemons, halved
Crockpot Spring Chicken Soup

- 1 tab. olive oil
- 1-1.5 pd. boneless chicken breast
- 48 oz. chicken broth
- 1 bunch of scallions, chopped and separated into white and green
