Mac and Cheese- Jo's

Preheat oven to 350℉. Melt crisco/butter and add flour to make paste
- ● 2 cup macaroni, cooked and drained
- ● 2 tbsp butter crisco, or crisco and butter divided into 2 tbsp
- ● 2 tbsp flour
- ● 1 cup milk
- ● 1 lb. velveeta cheese, cut into slices to melt faster
- ● bread crumbs
- ● dry parmesan cheese
Chicken Parmesan

1. Preheat oven to 375 degrees
- 2 1/2 cups marinara/ spaghetti sauce
- 1 cup mozzarella cheese
- 1/2 bunch fresh basil (I used leaves from 2 stems) diced
- 1 1/2 cups panko bread crumbs
- 1 cup fresh grated parmesan cheese
- 1 tsp oregano
- 3 Tbsp parsley flakes
- salt and pepper
Beef Pot Roast

Baked Polenta with Spinach and Chicken Apple Sausage

- 2 - 18 ounce tubes of pre-cooked polenta
- 1 medium sized yellow onion, finely chopped
- 1 pound baby spinach
- 2 pounds chicken sausage (use any flavor that you like, we used "apple")
- 3 cups marinara sauce (we used Anise-Vanilla Marinara and it was delicious with the chicken-apple sausage)
- 12 ounces shredded mozzarella cheese
- EVOO
Southwest Loaded Baked Potatoes

- 4 small potatoes (traditional white/Idaho/russet will do
- 2 tablespoons olive oil (may sub melted butter)
- ½ each red and green peppers, diced
- ½ white onion, diced
- 1 cup frozen yellow corn
- 1 cup black beans, drained and rinsed
- 1 tablespoon taco seasoning
- ½ teaspoon salt
- ½ cup shredded cheddar or mexican blend cheese
- 4 strips of bacon, cooked and diced or crumbled

- ● 1 pkg mozzarella cheese, shredded
- ● 1 can mushrooms, sliced

- ● 1 lb. ground beef, browned, drained
- ● 1 can cream of mushroom soup
Sweet Potatoes- Roasted Almonds and Sweet Potatoes

- 4 medium sweet potatoes, peeled and cut into 1-inch-thick cubes
- 3 tablespoons olive oil
- 4 large garlic cloves, minced
- 1/3 cup fresh thyme leaves, plus
- 6 sprigs fresh thyme for garnish
- 1/2 teaspoon kosher salt (optional)
- 1/2 cup sliced California Almonds
