Baked Shrimp Scampi

- 2 pounds (12 to 15 per pound) shrimp in the shell
- 3 tablespoons good olive oil
- 2 tablespoons dry white wine
- Kosher salt and freshly ground black pepper
- 12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature
- 4 teaspoons minced garlic (4 cloves)
- 1/4 cup minced shallots
- 3 tablespoons minced fresh parsley leaves
- 1 teaspoon minced fresh rosemary leaves
- 1/4 teaspoon crushed red pepper flakes
- 1 teaspoon grated lemon zest
- 2 tablespoons freshly squeezed lemon juice
- 1 extra-large egg yolk
- 2/3 cup panko (Japanese dried bread flakes)
- Lemon wedges, for serving
Poppyseed Dressing

- 1/4 c white sugar (1/8 c Splenda, 1 T sugar, 1 T agave)
- 1/4 t dry mustard
- 1/4 c olive oil
- 1 t poppy seeds
- 1/8 t salt
- 1 1/2 T white balsamic vinegar
- 1 t or more grated onion
- grated garlic
Pulled Pork

Season pork pieces with salt and pepper
- 2-pound pork butt, cut into 4 pieces
- Salt and pepper
- 1/4 cup soy sauce
- 3 T water
- 1/4 cup chili garlic sauce
- 1/4 cup ketchup
- 1/4 cup white vinegar
- 1 tablespoon Splenda brown sugar
Maple Pecan Sweet Potatoes

Serves 2 Prep Time: 5 minutes Total Time: 45 minutes Preheat oven to 425 degrees Fahrenheit (218 degrees Celsius)
- 2 medium sweet potatoes
- 1 tablespoon vegetable oil
- Salt and black pepper, to taste
- 2 tablespoons butter, melted
- 1 teaspoon ground cinnamon
- 1/4 cup chopped pecans
- 1/4 cup maple syrup
- 1/2 teaspoon pure vanilla extract
- 1/2 teaspoon kosher salt
Sausage-Stuffed Cubanelle Peppers (Rachael Ray)

Preheat the broiler. Broil the peppers, turning occasionally, until blistered and softened, about 8 minutes
- 12 cubanelle peppers (frying peppers)
- 1 tablespoon olive oil
- 2 pounds sweet Italian sausage with fennel seed, removed from casings
- 1 small onion, chopped
- 2 red finger chiles or Fresno chiles, seeded and thinly sliced
- 5 - 6 cloves garlic, chopped
- 1 teaspoon cumin
- 2 tablespoons tomato paste
- 1 cup chicken stock
- 1/2 cup flat-leaf parsley, chopped
- 2 cups crumbled feta or sharp provolone, shredded
Italian-style Tuna

- Thick tuna steak
- Fajita seasoning
- Olive oil/butter
- Minced shallot
- Minced garlic
- Rough chopped kalamata olives
- Sea salt (smoked)

- 2 cups all-purpose flour
- 2 cups shredded sharp Cheddar cheese
- 3/4 cup margarine
- 1 teaspoon baking powder
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1/2 cup water
Mac and Cheese

- 1 cup whole grain or multi-grain shaped pasta – cooked
- 1Tblspn butter
- 1 Tblspn flour
- ½ cup chicken stock
- ½ cup buttermilk
- ¾ cup low fat cheddar cheese
- ¼ cup low fat swiss cheese
- Nutmeg
- Salt
- Pepper
- Bread crumbs
- Butter, melted
Roasted Chicken with Lemon & Herbs

- 1 (4-pound) chicken
- 3 tablespoons salt
- 4 tablespoons butter, at room temperature
- 1 teaspoon freshly ground black pepper
- 2 tablespoons fresh rosemary, stems discarded before measuring, finely chopped
- 4 cloves garlic, minced
- 1 lemon, zested, then juiced
- 8 potatoes (ideally Yukon gold), halved
