Of all the ways to cook potato, this is my absolute favourite

  • 2 lb /1 kg starchy potatoes (Note 1)
  • 1/2 clove unpeeled garlic
  • 4 tablespoons butter, chopped into small cubes (Note 3)
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 1/2 cups grated gruyere cheese (or tasty or cheddar)
  • 1 1/2 cups cream
  • 2 tsp thyme leaves (optional - but highly recommended)

  • FRANGIPANE:
  • 1 cup all-purpose flour
  • 3 tablespoons sugar
  • 1/2 teaspoon salt

  • 1/2 teaspoon finely grated fresh lemon zest
  • 2 large egg yolks

  • 7 to 8 oz almond paste (not marzipan or almond filling)
  • 1/2 stick (1/4 cup) unsalted butter, softened
  • 3 tablespoons sugar
  • 1/8 teaspoon almond extract
  • 2 large eggs
  • 3 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1 1/4 lb firm-ripe nectarines
  • 1/3 cup peach preserves
  • 2 tablespoons water
  • 1 tablespoon Disaronno Amaretto (optional)

  • 3 cups King Arthur Unbleached All-Purpose Flour
  • 1/2 cup milk (skim, 1%, 2% or whole, your choice)*
  • 1/2 to 2/3 cup hot water, enough to make a soft, smooth dough
  • 1/4 cup melted butter or vegetable oil
  • 2 tablespoons sugar
  • 1 1/4 teaspoons salt
  • 1 packet active dry yeast dissolved in 1 tablespoon warm water OR 2 teaspoons instant yeast
  • Mix cold milk with hot tap water to make a lukewarm liquid before adding to the remainder of the ingredients.

  • 6 8-ounce tuna steaks

  • 1/2 cup parsley, minced
  • 1/2 cup marinated roasted peppers

  • 2 T lemon juice, divided (original recipe called for 1/4 cup)

  • 1 cup good marinara sauce or quality tomato puree – get the good stuff
