JULIA CHILD’S POTATO DAUPHINOISE (POTATO BAKE)

Of all the ways to cook potato, this is my absolute favourite
- 2 lb /1 kg starchy potatoes (Note 1)
- 1/2 clove unpeeled garlic
- 4 tablespoons butter, chopped into small cubes (Note 3)
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1 1/2 cups grated gruyere cheese (or tasty or cheddar)
- 1 1/2 cups cream
- 2 tsp thyme leaves (optional - but highly recommended)
Nectarine Almond Frangipane Tart

Make 1/2 Frangipane recipe for my Almond Apricot French pastry
- FRANGIPANE:
- 1 cup all-purpose flour
- 3 tablespoons sugar
- 1/2 teaspoon salt
- 3/4 stick (6 tablespoons) cold unsalted butter, cut into 1/2-inch pieces
- 1/2 teaspoon finely grated fresh lemon zest
- 2 large egg yolks
- 1/2 teaspoon vanilla
- 1 1/2 teaspoons water
- 7 to 8 oz almond paste (not marzipan or almond filling)
- 1/2 stick (1/4 cup) unsalted butter, softened
- 3 tablespoons sugar
- 1/8 teaspoon almond extract
- 2 large eggs
- 3 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1 1/4 lb firm-ripe nectarines
- 1/3 cup peach preserves
- 2 tablespoons water
- 1 tablespoon Disaronno Amaretto (optional)
Seared Duck Breast with Cherries and Port Sauce

very good. used frozen sweet cherries
- 2 5-to 6-ounce duck breast halves or one 12-to 16-ounce duck breast half
- 2 tablespoons (1/4 stick) chilled butter, divided
- 1/4 cup finely chopped shallot (about 1 large)
- 1/2 cup low-salt chicken broth
- 8 halved pitted sweet red cherries, fresh or frozen, thawed
- 2 tablespoons tawny Port
- 1 tablespoon orange blossom honey
Salad Dressing

Whirl in your mini-processor or beat vigorously with a whisk
- Basic:
- ¼ cup olive oil
- 2-3 T white or red wine vinegar (start with 2 – the traditional 2:1 oil: vinegar ratio)
- ½ t salt
- 1 packet Splenda sweetener
- Dash white or black pepper

- 1/2 c Champagne vinegar
- 1 T or less red chili flakes
- 1 T minced garlic
- 2 T minced red onion
- 2 c light brown sugar
- 1/2 c soy sauce
- 1 t salt
- 2 T tomato paste
- 1 stick butter

- 3 cups King Arthur Unbleached All-Purpose Flour
- 1/2 cup milk (skim, 1%, 2% or whole, your choice)*
- 1/2 to 2/3 cup hot water, enough to make a soft, smooth dough
- 1/4 cup melted butter or vegetable oil
- 2 tablespoons sugar
- 1 1/4 teaspoons salt
- 1 packet active dry yeast dissolved in 1 tablespoon warm water OR 2 teaspoons instant yeast
- Mix cold milk with hot tap water to make a lukewarm liquid before adding to the remainder of the ingredients.
Cranberry, Feta and Walnut Salad

Have not tried - but looks good
- 2 cups mixed salad greens (I use leaf lettuce, endive and radiccio)
- 1 cup dried sweetened cranberries
- 4 ounces crumbled feta cheese
- 1 ⁄2 cup walnut pieces, toasted
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1 ⁄4 teaspoon ground black pepper
- 1 ⁄4 cup extra virgin olive oil
Italian-style Grilled Tuna (for the sauce)

These tuna steaks are grilled up hot and fast and served with an great Italian-style roasted pepper sauce
- 6 8-ounce tuna steaks
- 3/4 cup olive oil, divided
- 1/2 cup parsley, minced
- 1/2 cup marinated roasted peppers
- 1/2 cup scallions, sliced thinly
- 2 T lemon juice, divided (original recipe called for 1/4 cup)
- 2 tablespoons capers, chopped
- 2 tablespoons fresh oregano, minced or 2 teaspoons dried oregano
- minced garlic, kalamata olives - optional
- salt and pepper to taste

Remy's Ratatouille

Lightly grease the pan with olive oil, then cover the bottom of the pan with the tomato sauce
- Bulgur wheat:
- Olive oil
- 1 cup good marinara sauce or quality tomato puree – get the good stuff
- Fresh garlic
- Onion
- 1 small zucchini
- 1 small yellow squash
- 1 baby eggplant
- 2-3 Roma tomatoes
- 1-2 long red bell peppers (the narrowest you can find will do)
- 2 T shaved parmesan cheese
- Fresh thyme
- Salt and pepper

- 1/2 cup mayonnaise
- 2 tablespoons sour cream
- 1 tablespoon lemon juice
- 1/8 teaspoon salt
