- 2 lb 93% Ground Beef
- 2 tsp Beef Bouillon
- 1/2 Cup EVOO
- 1 10 oz Can Tomato and Green Chilis
- 1 28 oz Can Diced Tomatoes
- 1 15 oz Can Light Red Kidney Beans
- 1 14.5 oz Can SODIUM FREE Stewed Tomatoes
- 1/4 Cup Sugar
- 1/4 Cup Ketchup
- 1 Pablano Pepper medium diced
- 1 Green Bell Pepper medium diced
- 1 Red Bell Pepper medium diced
- 1 Medium Sweet Onion medium diced
- 3/4 Cup Chili-O Spice
Boeuf Bourguignon

For the beef: Place the beef into a large nonreactive bowl and add the wine
- 3 pounds boneless beef chuck, cut into 1-inch pieces
- 1 bottle dry red wine, preferably Burgundy or Cotes du Rhone
- 1/4 cup coarsely ground black pepper
- Salt
- 1/2 cup all-purpose flour
- 1/4 pound applewood smoked thick-sliced bacon, cut crosswise into 1/4-inch slices
- 1/2 cup sherry wine, preferably Manzanilla
- One 4-inch piece celery
- 4 fresh parsley stems
- 4 fresh thyme sprigs
- 2 dried bay leaves
- 5 tablespoons unsalted butter
- 3 cloves garlic, finely chopped
- 2 carrots, cut into 1/4-inch slices
- 2 onions, finely chopped
- 1 tablespoon tomato paste
- Salt
- 1 pound pearl onions
- Freshly ground black pepper
- 1 pound cremini mushrooms, quartered
- 1/4 cup chopped fresh parsley, for garnish
- Accompaniment: 2 pounds roasted fingerling potatoes
Low Cal-Low Carb Beanless Chili

Excellent replacement for high carb, high calorie chili on a cold winter day
- 1 lb Extra lean hamburger
- 2 medium zucchini chopped small
- 1 TBs canola or olive oil
- 1 medium yellow onion
- 1 yellow, 1 red and 1 orange mini bell peppers
- 1 large can tomato juice (46 oz)
- 1/2 cup vinegar
- 1 can diced tomatoes
- 1 can Mexican stewed tomoatoes (plain or fire roasted diced are fine )
- Mild Chili Seasoning Packet (I like the original Chili O, but they all work)
- salt
- pepper
- OPTIONAL -
- 1 TBS Stevia or other sweetener of choice
- 2 tsp cinnamon (I know, but some really like it)
Homemade Black Bean Veggie Burgers

Directions If grilling, preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil
- 1 (16 ounce) can black beans, drained and rinsed
- 1/2 green bell pepper, cut into 2 inch pieces
- 1/2 onion, cut into wedges
- 3 cloves garlic, peeled
- 1 egg
- 1 tablespoon chili powder
- 1 tablespoon cumin
- 1 teaspoon Thai chili sauce or hot sauce
- 1/2 cup bread crumbs
Surimi Salad

To prepare the sauce, in a small bowl, mix together the mayonnaise and wasabi paste unti well blended
- 2 cups good-quality mayonnaise
- 3 tablespoons crushed pineapple
- 1 tablespoon wasabi paste
- 1 tablespoon peeled and minced fresh ginger
- cup finely chopped red onion
- 4 cloves garlic, finely chopped
- 3 tablespoons chopped fresh cilantro
- 1 teaspoons freshly squeezed lime juice
