Homemade Tuna Salad

- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground white pepper
- 2 (12-ounce) portions tuna steak
- 1/2 cup plus 1 tablespoon mayonnaise
- 3 tablespoons finely chopped red onion
- 6 tablespoons finely chopped celery
- 1/4 cup sliced pimento stuffed green olives
- 4 1/2 teaspoons sliced green onion tops (green parts only)
- 1 tablespoon chopped parsley leaves
- 1/4 teaspoon celery seed
- 1/4 teaspoon freshly ground black pepper
- Lettuce cups or sliced bread
Dad's Fresh Salmon Burgers

- 1 lb. salmon fillet, skinned, with
- any bones removed
- 1/4 cup panko bread crumbs
- 2 Tbsp. finely minced red bell pepper
- 2 Tbsp. finely minced red onion
- 1 Tbsp. finely minced cilantro
- 1 Tbsp. lite soy sauce
- 1/2 tsp. fresh grated ginger
- 2 tsp. canola or vegetable oil
- 4 small whole wheat burger buns, toasted
- 4 slices tomato
- 4 romaine lettuce leave

- 16 oz sweet salad cubes, drained
- 1/2 c finely chopped onions
