Simple Summer Cucumber, Onion and Tomato Salad

- For the Dressing:
- 2 large cucumbers
- 3 large tomatoes
- 1 large vidalia or red onion, halved and sliced thick
- 1/4 cup extra virgin olive oil
- 1/2 cup vinegar - apple cider, red wine or white are all good choices
- 1-2 teaspoons granulated sugar, or to taste
- 1/2 tablespoon fresh, chopped herbs (parsley, basil, oregano), or to taste
- 1 teaspoon kosher salt, or to taste
- 1/4 teaspoon freshly cracked black pepper, or to taste
Linguine With Escarole and Shrimp

Lots of tangy lemon, fresh tomatoes, escarole and shrimp create an incredible sauce for whole-wheat pasta
- 8 ounces whole-wheat linguine
- 4 teaspoons extra-virgin olive oil
- 1 pound raw shrimp, peeled and deveined
- 3/4 teaspoon salt
- 1/4 teaspoon freshly ground pepper, plus more to taste
- 2 tablespoons minced garlic
- 1/2 cup white wine
- 1 pint grape or cherry tomatoes, halved
- 16 cups escarole or chard leaves, thinly sliced (about 2-3 heads)
- 1/4 cup clam juice or water
- 1 teaspoon cornstarch
- 1 tablespoon lemon juice
- 6 lemon wedges, for garnish
Mashed Cauliflower

- 4 cups low-sodium chicken broth

- Limoncello Buttercream Ingredients:
- 4 oz. cream cheese, softened
- 6 tablespoons unsalted butter, softened
- 2 eggs
- 2 teaspoons fresh lemon zest
- 2/3 cup sugar
- scant cup all-purpose flour
- 1/2 teaspoon baking powder
- pinch of salt
- fresh mint leaves, lemon drops and/or sprinkles for garnish
- 1/2 cup unsalted butter, 1 stick
- 1/2 cup shortening
- 4 cups confectioners' sugar, sifted

- For the Gyro Meat:
- 2 pounds ground beef (between 80/20 and 90/10)
- 2 pounds ground lamb
- 1 large onion, peeled and cut into 1-inch chunks
- 2 tablespoons minced garlic
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
- 2 1/2 teaspoons ground cumin
- 2 teaspoons kosher salt
- 2 teaspoons ground black pepper
- 1 teaspoon dried rosemary
- For the Gyros:
- Gyro meat, fully cooled
- ghee or extra virgin olive oil
- flatbread pitas
- mixed salad greens
- cucumber yogurt sauce
- halved cherry tomatoes or chopped large tomatoes
- thinly sliced sweet onions
- crumbled Feta cheese
- Optional but tasty: Greek dressing and chopped or smashed Greek olives

- 1 stick butter

Beef Patties are a childhood favorite of mine
- Pastry:
- 1 lb flour
- 1/2 cup ice cold water
- 1/2 cup melted butter
- 1/2 cup shortening
- 1 tsp salt
- 1 Teaspoon of baking powder
- 1 Teaspoon of curry powder medium hot
- 1 Teaspoon turmeric or 1 drop annatto
- Meat:
- 1 lb ground beef
- 1 medium onion
- 4 scallion (or 1 more medium onion)
- 2 stalks fresh thyme or 2 tsps ground thyme
- 1/2 cup breadcrumbsBeef Patties are a childhood favorite of mine. This beef patty with a rich, buttery crust combined with the seasoned meat inside will melt in your mouth and tempt your tastebuds.
- 1 scotch bonnet pepper (or 1 tbs curry powder/chili sauce)
- 2 cloves garlic
- 1 cup water
- 1 tsp salt
- 1 tsp pepper
- 1 tsp paprika
- 1/2 tsp sugar

1. Put the Hominy corn in a slow cooker and fill with 3-5 cups water and leave for 5-6 hours (or Overnight)
- 1 cup Hominy Corn
- 2 cups Coconut milk (Skim milk can substitute)
- 3-5 cups water
- 3 tablespoons flour
- 6 tablespoons water
- 1/2 tsp salt

- Base:
- 1 large sweet potato, grated
- 1 TBSP ground flax
- 3 TBSP warm water
- 1 TBSP melted coconut oil
- 2 TBSP Italian seasoning
- Filling:
- 1 TBSP coconut oil
- 2 shallots, minced
- 3/4 of a large box of spinach, or 2 bags
- 1 cup peas (I used frozen)
- 5 sundried tomates (I used in oil)
- 1/2 cup ricotta cheez (see below)
- 1/2 cup breadcrumbs (I used gluten free)
- salt and pepper to taste
- Ricotta Cheez (Adapted from the Simple Veganista)
- 1 and 1/2 cups raw cashews
- 1/2 cup water
- 1 lemon, juiced
- 1 TBSP nutritional yeast
- 1 clove garlic, minced
- 1/4 tsp salt (more if you like it salty)
