LEMON BROWNIES

1. Preheat the oven to 350 degrees
- For the tart lemon glaze:
- 1/2 cup unsalted butter, softened
- 3/4 cup flour
- 2 eggs, large
- 2 tbsps lemon zest
- 2 tbsps lemon juice
- 3/4 cup granulated sugar
- 1/4 teaspoon sea salt
- 4 tbsps lemon juice
- 8 tsps lemon zest
- 1 rounded cup powdered sugar
Cheesy Chicken Quesadillas

1. Heat oven to 450. 2. In medium sized bowl, stir together chicken, cheese, onion, and taco seasoning
- 2 c chopped cooked chicken
- 1/4 c cheddar cheese
- 1/4 c monterey jack cheese
- 2 T chopped red onion
- 1 3/4 taco seasoning
- 1 1/2 T chopped cilantro (optional)
- 4 6 inch whole wheat tortillas
- 1/2 c salsa (Optional)
Sweet Potato Bread

This easy sweet potato yeast bread is mixed and baked in the bread machine
- 1/2 cup plus 2 tablespoons water (5 ounces)
- 1 teaspoon vanilla extract
- 1 cup plain mashed sweet potatoes
- 4 cups bread flour
- 1/4 teaspoon each ground nutmeg and cinnamon
- 2 tablespoons butter
- 1/3 cup dark brown sugar
- 1 1/2 teaspoons salt
- 2 teaspoons active dry yeast
- 2 tablespoons dry milk powder
- raisins or chopped pecans, optional
Real Chocolate Milk

- 1 tbsp of sugar (we use an organic muscovado sugar for a deep rich flavor)
- 1 tsp of *organic baker’s cocoa powder

- Hot water
Pumpkin Bread Pudding with Hot Buttered Rum Sauce

Directions: Preheat oven to 350°F
- Ingredients:
- Pudding:
- 1 loaf rich egg bread, such as Challah or Brioche equal to about 1 lb., cut into large, 1-inch cubes (bread can be day-old)
- 15-oz. can of organic pumpkin puree (such as Farmer's Market) or regular pumpkin purée
- 1 cup pecans, chopped
- 1/2 cup golden raisins
- 2-1/2 cups whole milk
- 3/4 cup sugar
- 1/2 cup brown sugar
- 4 eggs
- 1 tsp. vanilla
- 2 tsp. cinnamon
- 1 tsp. ground ginger
- 1/2 tsp. freshly grated nutmeg
- 1/2 tsp. ground allspice
- 1/8 teaspoon salt
- Sauce:
- 1 stick (4 oz.) unsalted butter
- 1 cup heavy cream
- 1 cup dark brown sugar, packed
- 3 Tbsp. dark rum

- 1/2 cup dried cherries
- 1/2 cup pecan halves
- 6 ounces blue cheese chunks
- 2 whole apples, cored and sliced very thin

Bonefish Grill's Bang Bang Shrimp

A copycat restaurant recipe for spicy, crunchy Bang Bang Shrimp
- Sauce:
- 1/2 cup mayonnaise
- 1 - 2 tablespoons hot sauce (like Cholula )
- 1/3 cup sweet chili sauce
- 1 teaspoon rice vinegar
- Breading:
- 1/2 cup cornstarch
- 2 eggs, beaten with 2 tablespoons water
- 3/4 cup all-purpose flour
- 1/2 cup panko breadcrumbs
- 1 teaspoon coarse salt or 1/2 teaspoon table salt
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- oil for deep frying - vegetable, coconut or canola

- 2 tablespoons reduced-sodium soy sauce
- 1 1/2 teaspoons wasabi powder, (see Note)
