Apple Pandowdy

- 3 lbs. Granny Smith apples, peeled, cored, and sliced
- 1 tbs. lemon juice
- 1 tsp. lemon juice
- ½ cup packed light brown sugar

- 6 ½ tbs. butter, chilled
- 2 cups flour
- 3 tbs. sugar
- 1 tbs. baking powder
- ¾ cup and 1 tbs. heavy cream
Watermelon Sorbet

- 1 small watermelon
- 1 cup sugar
- Juice of ½ a lemon, strained
- 1 lime, peel on, sliced thinly
- 1 peach, skin on, cut into thin wedges
Summer Berry Trifle

Stir boiling waterinto gelatin 2 minutes, until dissolved
- 1 cup boiling water
- 1 pkg. strawberry flavoured gelatin
- Ice cubes
- 1/2 cup cold water
- 2 cups mixed berries
- 1 pkg. cream cheese (8 oz), softened
- 1 1/4 cup cold milk, divided
- 1 pkg (4 serving size) instant cheesecake or vanilla instant pudding
- 8 oz cool whip topping
- 1 pkg. pound cake, cubed
Grilled Stuffed Chicken Breasts

Heat the oven to 375 degrees
- 1 head garlic clove, separated
- 1 small bunch rosemary sprigs
- 6 tbs. olive oil
- 4 ounces scamorza, cut into 1/8 inch cubes
- 2 1/2 ounces fresh ricotta
- 1/4 cup finely chopped roasted red pepper
- 1/4 cup thinly sliced basil leaves
- 4 - 8 oz. skinless, boneless chicken breast halves
- Salt and pepper
Oreo Cheesecake

PREHEAT oven to 325°F. Line 13x9-inch baking pan with foil, with ends of foil extending over sides of pan

- 1 pkg. (1 lb. 2 oz.) OREO Chocolate Sandwich Cookies, divided
- 1/4 cup (1/2 stick) butter or margarine, melted
- 4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
- 1 cup sugar
- 1 tsp. vanilla
- 1 cup BREAKSTONE'S or KNUDSEN Sour Cream
- 4 eggs

Chicken Breasts in Wine Sauce

Heat oil over medium high heat, brown breasts five minutes on each side and then remove from pan
- 1 ½ tbs. olive oil
- 2 boneless skinless chicken breasts
- 1- 1 ½ cups white wine
- 2 – 3 whole shallots, sliced into slivers
- 1 bunch fresh tarragon, coarsely chopped
- ¼ -1/3 cup heavy cream
- Salt and pepper
Blueberry Sauce

Combine sugar, juice, zest, and cinnamon in a heavy pan
- 2 cups sugar
- Juice and zest of 1 lemon
- ½ tsp. cinnamon
- ¼ tsp. ginger
- 1 pint blueberries
Caramelized Onions and Carrots
