- 2 tbs. olive oil
- 5 oz. thinly sliced smoked ham
- ½ lb. mozzarella cheese
Bechamel Sauce

Melt the butter over low heat and stir with a whisk
- 2 tbs. butter
- 2 tbs. flour
- 3/4 ¾ cup half and half cream
- 1/4 ¼ cup white wine
Penne with Chicken and Peppers

Heat oil over medium high heat, add peppers and cook until they soften, about 2 minutes

- 2 red peppers, sliced into thin strips
- 1 green pepper, sliced into thin strips

- 1 can ready cut tomatoes
- 1 lb. pasta, cooked
- 1/4 ¼ cup grated cheese
Choux Pastry

White Choclate Raspberry Swirl Cheesecake

- 2 pkgs. cream cheese, softened
- 1/2 cup sugar
- 1/2 tsp. vanilla
- 2 eggs
- 3 squares white baking chocolate, melted
- 1 oreo pie crust
- 3 tbs. raspberry preserves
Chicken Fricasse

- 3 ½ - 4 ½ lbs. chicken parts, rinsed and pat dry, skin removed
- Salt and pepper
- 4 tbs. butter
- 1 ½ cups onions, chopped
- 1/3 cup flour
- 2 cups hot water
- 1 ¾ cups chicken broth
- 8 oz. mushrooms, sliced
- 3 medium carrots, peeled and diced, about 1 cup
- 2 – 3 large celery stalks, diced, about 1 cup
- ½ tsp. dried thyme
- Salt and pepper
Madeira Cake
