- 1 litre homo milk
- 8 eggs
- 75 grams cornstarch
- 100 grams sugar
- Vanilla to taste

Finnish Chestnut Cookies

Preheat oven to 350 degrees
- 6 tbs. butter flavored Crisco - softened
- 1/4 cup sugar
- 1 egg yolk
- 1/2 cup canned chestnuts, drained and pureed
- 1/4 tsp. vanilla
- 1 cup flour
- 1/4 tsp. salt
- 1/4 tsp. cinnamon
- 1 egg white, slightly beaten
- Additional sugar
- 1/2 cup semi-sweet chocolate chips
Capuccini Biscotti

Combine flour, sugar, baking soda, baking powder, salt, cinnamon, and cloves
- 2 cups flour
- 1 cup sugar
- ½ tsp. baking soda
- ½ tsp. baking powder
- ½ tsp. salt
- ½ tsp. cinnamon
- ¼ tsp. cloves
- ¼ cup plus 1 tbsp. strong espresso, cooled
- 1 tbsp. plus 1 tsp. milk
- 1 large egg yolk
- 1 tsp. vanilla
- ¾ cup hazelnuts, toasted, skinned, and chopped coarsely
- ½ cup semi-sweet chocolate chips

Beef Stir Fry

Heat oil, when hot and add meat and garlic; stir fry 2 minutes
- 2 tbs. oil
- 2 lb. strip loin steak, cut into strips
- 1 garlic clove, smashed and chopped
- 2 tbs. Soya sauce
- 4 green onions cut into 1 inch lengths
- 1 red onion, cut in half and sliced
- 2 dill cucumbers, sliced
- 1 yellow pepper, sliced
- 7 oz snow peas, end trimmed
- 1 cup bean sprouts
- Salt and pepper
Gransmas Apple Cake

CAKE: PREHEAT oven to 350ºF (180ºC)
- CAKE:
- 3 cups ROBIN HOOD® All Purpose Flour 750 mL
- 1 3/4 cups granulated sugar 425 mL
- 1 tbsp baking powder 15 mL
- 1/4 tsp salt 1 mL
- 4 eggs 4
- 1 cup CRISCO® Vegetable or Canola Oil 250 mL
- 1/3 cup apple or orange juice 75 mL
- 2 tsp vanilla 10 mL
- FILLING:
- 4 large apples , peeled, thinly sliced 4

Ganache

- 8 oz. semi sweet chocolate, cut into pieces
- ¾ cup whipping cream
- 2 tbs. butter
- 1 tbs. cognac or brandy
Tortellini in Sauce

Heat the butter in a skillet
- 3 tbs. butter
- 1 onion, chopped
- 1 tbs. chopped parsley
- 1 garlic clove, smashed and chopped
- 1/4 ¼ lb. mushrooms, diced
- 1 cup dry red wine
- 2 cups beef stock, heated
- 2 tbs. cornstarch
- 3 tbs. cold water
- 1/2 ½ lb. tortellini, cooked
- 1/2 ½ cup crumbled, cooked bacon
- 1/2 cup grated Parmesan cheese
- Salt and pepper
Ricotta Cookies

Preheat oven to 350 F. Mix all of the cookie ingredients well until the dough sticks together into a big ball
- For the cookies:
- 1 cup butter, softened
- 2 cups granulated sugar
- 1 (15 ounce) container of ricotta cheese
- 3 teaspoons vanilla extract
- 1 teaspoon salt
- 1 teaspoon baking soda
- 4 cups all-purpose flour
- For the glaze:
- 1 cup powdered sugar
- milk
- sprinkles

Cake Characteristics
- 3 cake contains 3 ingredients: egg, sugar, and flour. Beat yolks and sugar, add the flour and the whisked egg whites.
- •Roulade is a sponge cake baked in a baking sheet pan, then rolled up in a towel while still warm.
- •Genoise cake-eggs are beaten whole and combined with sugar over a water bath. This cake is more tender but less sweet than a regular sponge cake. Care must be taken so that the addition of flour, and clarified butter doesn’t deflate the batter
