TGI Fridays Jack Daniels Grill Glaze

Cut about 1/2 inch off the top of the garlic
- 1 head of garlic
- 1 tablespoon olive oil
- 2/3 cup water
- 1 cup pineapple juice
- 1/4 cup teriyaki sauce
- 1 tablespoon soy sauce
- 1 1/3 cup dark brown sugar
- 3 tablespoons lemon juice
- 3 heaping tablespoons minced white onion
- 1 tablespoon Jack Daniels whiskey
- 1 heaping tablespoon crushed pineapple
- 1/4 teaspoon cayenne peppe
Roasted Cheddar Cauliflower:

Preheat your oven to 450 degrees
- 1 head of Cauliflower, cored and cut into medium florets
- 2 tablespoons warmed Bacon Fat
- Sea Salt and Ground Black Pepper
- 1 cup Cheddar, freshly grated {Like Kerrygold}
Crockpot BBQ Chicken

Place your uncooked chicken in the crockpot
- 10-12 chicken drums or 6 large chicken breasts
- 1 container of your favorite BBQ sauce
MEXICAN CHICKEN STUFFED SHELLS

Cook pasta shells in well salted, boiling water until al dente (still have a little bite to them) If you cook them...
- 4 cups chicken breast, cooked and chopped
- 1 can black beans, rinsed and drained
- 6 green onions, diced
- 1/2 each of red, green, yellow, & orange bell peppers (or 2 whole bell peppers of your choice), diced
- 3 (8 oz.) blocks cream cheese, softened
- 2 cans diced tomatoes with chiles (don’t drain) (Rotel or store brand, either works)
- 1/2 cup chicken stock
- 1 tsp cumin
- 1 1/2 cups sharp cheddar cheese, shredded
- 1 cup of picante sauce
- 38 large pasta shells, cooked al dente
Frozen Fruit Pops

In a large bowl, combine all ingredients
- 2 (20 oz.) cans crushed pineapple, undrained
- 2 (10 oz.) packages frozen sweetened strawberries, thawed and mashed
- 1 (20 oz.) can fruit cocktail, undrained
- 1 (15 oz.) can Mandarin oranges, drained
- 1 (12 oz.) can frozen orange juice concentrate, thawed
- 1 (6 oz.) can frozen lemonade concentrate, thawed
- 6 medium firm bananas
- 3 ounce plastic cups
- Popsicle sticks
Blackeye Peas

Step 1.) Sort & wash the black eyed peas
- 4-5 green onions, chopped (or 1 medium white onion, chopped)
- 3 cloves of garlic, chopped
- 1 (16 oz) bag of dry black eyed peas
- Smoked Turkey or Ham (as much as you desire. I used half of a fully cooked, smoked turkey leg. Just chopped the meat up into bits. You can leave it whole if you do not like meat in your black eyed peas but like the flavor)
- 6-8 cups of chicken broth (or enough to cover the beans)
- Red pepper flakes, black pepper (optional)

- 1/2 cup Canola oil

Coconut Chicken with Apricot Sauce

Preheat the oven to 400˚F
- 1 egg
- 1 cup sweetened coconut flakes
- 1/2 cup flour
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 boneless chicken breasts
- 1/2 cup unsalted butter, melted
- 1/4 cup apricot preserves
- 2 tablespoons Dijon mustard

Preheat oven to 425 degrees and bring a large pot of water to a boil
- 1 bunch of Broccoli, trimmed and cleaned
- Juice of 1/2 a lemon
- 2 Garlic Cloves, smashed and peeled
- 1/4 cup Olive Oil
- 1/4 teaspoon Red Pepper Flakes
- Small Pinch of Kosher Salt
- A Pinch of Fresh Cracked Black Pepper
- Parmesan (as little or as much as your heart desires)
Banh Mi Sandwich

Start by marinating the pork
- Marinade:
- 3/4 Cup soy sauce
- 1/4 cup hosin sauce (or stir fry sauce)
- 1/4 cup brown sugar
- 3 scallions
- 1/4 teaspoon (or more) red pepper flakes
- Juice from 1/2 a lime...a lemon would work as well
- a few cracks of black pepper
- 2 or 3 cut pork chops
- Spicy Mayo
- 1 cup mayo
- 1-2 tablespoons Sriracha Sauce (depends on how spicy you want it)
- 2 green onions/scallions
- Sandwiches
- 4 hoagies
- 1 medium onion--thinly sliced
- 1 cup carrots--thinly sliced
- 1/4 cup white sugar
- 1/4 cup vinegar
- 1 jalapeno--diced or sliced
- 2 tablespoons or so of cilantro
