Rotisserie Style Sticky Chicken

Preheat oven to 250 degrees
- 1 (3 to 4 pound) whole chicken
- 1 medium onion, cut into chunks
- 4 teaspoons of kosher salt
- 20 turns of the pepper grinder
- 1 teaspoon of Slap Ya Mama, or your favorite
- Cajun seasoning, or to taste
- 1/2 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1 teaspoon of white pepper
- 2 teaspoons of paprika
- 1 teaspoon of dried thyme, crushed
Sweet and Spicy Coleslaw

- 2 pounds green cabbage
- 4 carrots
- 1 medium yellow onion
- 1/2 cup mayonnaise
- 1/4 cup mustard
- 2 teaspoons apple cider vinegar
- 1 cup sugar
- 1 teaspoon black pepper
- 1/2 teaspoon cayenne
- Salt and freshly ground black pepper
Mom's Vegetable Bake

Cook vegetables according to package directions and drain
- 2 (20 ounce) packages california-blend frozen vegetables (frozen carrots, cauliflower and broccoli)
- 2 cups shredded cheddar cheese
- 1 1/2 cups mayonnaise
- 1 onion, chopped
- 1 sleeve Ritz cracker, crushed
- 1/4-1/2 cup melted butter

- 1 cup lemon juice
- 3/4 cup 100% pomegranate juice

- I triple this recipe, but I will post it as written.
- 2 Tablespoons soy sauce
- 1 Tablespoon orange juice
- 1/2 teaspoon red wine vinegar
- 1 Tablespoon brown sugar
- 1 teaspoon sesame oil or canola oil
- 1 teaspoon red pepper flakes (less if desired)
- 1/2 Tablespoon Cornstarch
- 1/4 Teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 to 1/2 teaspoon ginger
- I added 1 full teaspoon for a triple recipe.
Fiesta Chicken Spinach Dip

- 1 Boneless Chicken Breast or 5 Chicken Tenders, cut in 1/2" pieces
- 2 Tbsp. Flour
- 2 Tbsp. Canola Oil
- 1-10oz. Package Frozen Chopped Spinach, thawed and drained
- 1-15oz. Can Black Beans, rinsed and drained
- 1/2 Cup Scallions, chopped
- 1 Plum Tomato, diced
- 8 oz. Sour Cream
- 8 oz. Shredded Cheddar Cheese
- 2 tsp. Chili Powder
- 1 Bag Tortilla Chips
- 1 tsp. Kosher Salt
