Ghirardelli Fudge Cake

Cake: Preheat oven to 350 degrees
- Cake:
- 2 cups all-purpose flour
- 3/4 cup Ghirardelli unsweetened cocoa
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup butter softened
- 1-3/4 cup sugar
- 2 tsp vanilla
- 2 large eggs
- 1-1/3 cups milk
- Frosting:
- 6 tbsp. butter, softened
- 2-2/3 cup confectioners sugar
- 1/2 cup Ghirardelli unsweetened cocoa
- 1/3 cup milk
- 1/2 tsp vanilla
Quiche Lorraine II

Directions Preheat oven to 450 degrees F (230 degrees C)
- 1 recipe pastry for a 9 inch single crust pie
- 6 slices bacon
- 1 onion, sliced
- 3 eggs, beaten
- 1 1/2 cups milk
- 1/4 teaspoon salt
- 1 1/2 cups shredded Swiss cheese
- 1 tablespoon all-purpose flour
Brined Roast Turkey with Chipotle-Honey Glaze

1. Refrigerate the turkey until after the brine is prepared
- BRINE:
- 1 gallon vegetable stock
- 1-1/2 cup kosher salt
- 1/2 cup brown sugar
- 1/2 cup molasses
- 1 tbsp dried rosemary
- 1 tbsp dried thyme
- 1 tbsp dried sage
- 2 tsp allspice berries
- 4 bay leaves
- 1 tbsp ground black pepper
- 1/2 gallon cold water
- 8 cups ice
- GLAZE:
- 3 whole canned chipotles, seeded and minced (reserve liquid)
- 1/2 tsp Dijon mustard
- 1/2 cup honey
- 2 tbsp cilantro, finely chopped
- TURKEY:
- 15-20 LB turkey, defrosted, rinced, giblets and neck removed
- 1 stick butter, melted
- 1 large carrot, peeled and chopped
- 1 medium onion, chopped
- 2 stalks celery, chopped
- 2 cups chicken or turkey stock
Chocolate Hazelnut Tart Recipe

Directions In a small bowl, beat the butter, cream cheese, confectioners' sugar and lemon peel until creamy
- FILLING:
- 6 tablespoons butter, softened
- 2 tablespoons cream cheese, softened
- 1/3 cup confectioners' sugar
- 1 teaspoon grated lemon peel
- 1 cup all-purpose flour
- 4 eggs
- 3/4 cup sugar
- 1/2 cup chocolate syrup
- 1/4 cup dark corn syrup
- 1 cup chopped hazelnuts, toasted
- 1 cup (6 ounces) miniature semisweet chocolate chips
- Whipped cream and chocolate shavings, optional
Filet Mignons With Pepper Cream Sauce

Directions Place the peppercorns into a shallow bowl
- 1/4 cup coarsely crushed black peppercorns
- 4 (6 ounce) beef tenderloin filets, 1 1/2 inches thick

- 1 teaspoon olive oil
- 1/3 cup beef broth
- 1 cup heavy cream
Ranch Chicken Tacos

Directions Combine ranch dressing, sour cream, 1 teaspoon taco seasoning, and salsa in a small bowl
- 1/2 cup ranch dressing
- 1/4 cup reduced-fat sour cream
- 1 (1 ounce) packet taco seasoning mix, divided
- 1 tablespoon mild chunky salsa
- 2 cups shredded rotisserie chicken
- 8 (6 inch) corn tortillas
- shredded lettuce
- 1 tomato, chopped
- 4 green onions, sliced
- 1 (4 ounce) can sliced black olives
- 1 avocado - peeled, pitted and diced (optional)
- 1 cup shredded Colby-Monterey Jack cheese
Santa's Whiskers

1. In a large bowl, beat butter with electric mixer on medium to high speed for 30 seconds
- 1 cup (2 sticks) unsalted, at room temperture
- 1 cup sugar
- 2 tbsp milk
- 1 tsp vanilla, or rum extract
- 2-1/2 cups all-purpose flour
- 3/4 cup finely chopped red and/or green candied cherries
- 3/4 cup finely chopped pecans
- 3/4 cup flaked coconut
Champagne Shrimp and Pasta

1 Bring a large pot of lightly salted water to a boil
- 8 ounes angel hair pasta (or your choice of pasta)
- 1 tbsp extra virgin olive oil
- 1 cup sliced fresh mushrooms
- 1 pound medium shrimp, peeled and deveined
- 1/4 tsp salt
- 2 tbsp minced shallots
- 2 plum tomates, diced
- 1 cup heavy cream
- salt and pepper to taste
- 2 tbsp chopped fresh parsley
- freshly grated Parmesan cheese
Hot Buttered Rum

Pour boiling water into an Irish coffee glass, add brown sugar and stir
- 4 ounces boiling water
- 1 tsp brown sugar
- 3 ounces dark rum
- 1 tbsp unsalted butter
- Nutmeg for sprinkling
Blackberry-Ginger Clafouti

- 1 tablespoon butter, at room temperature
- 1/3 cup plus 1 tablespoon sugar
- 1/2 cup flour (I use a gluten-free all-purpose flour)
- Kosher salt
- 1 teaspoon grated fresh ginger
- 1/4 teaspoon store-bought or homemade garam masala, recipe follows
- 3 eggs
- 1/2 cup milk
- 1/2 cup heavy cream
- 2 teaspoons vanilla extract
- 1 cup fresh blackberries (or any berry!)
