Ina's Maple Baked Beans

Place the beans in a large bowl and cover with cold water by 1-inch and cover with plastic wrap
- pound dry red kidney beans
- 2 quarts water
- 1 large yellow onion, cut in eighths
- 1 bay leaf
- 6 whole black peppercorns
- 3/4 cup medium amber pure maple syrup
- 1/2 cup light brown sugar, lightly packed
- 1/2 cup ketchup
- 1 tablespoon Chinese chili paste
- 1 tablespoon grated fresh ginger
- 1 teaspoon kosher salt
- 5 ounces thick-cut smoked bacon, cubed
Lemon Oil Sauce

In a small jar with a tight-fitting lid, add the olive oil, lemon juice, oregano, salt and pepper
- 1/4 cup lemon juice
- 1/2 cup olive oil
- 1 tsp. dried oregano
- 1 pinch salt
- 1 pinch pepper

Preheat Oil to 365 degrees in a large dutch oven
- 2 quarts Vegetable Oil
- 3/4 cup Self-Rising Flour
- 1 cup Goat's Milk Ricotta
- 2 Eggs
- 1 1/2 tablespoons Granulated Sugar
- 2 Oranges (zest and juice)
- 1/4 cup Honey
- 1 pinch Salt
- Confectioner's Sugar (to garnish)

- 1 pound Cube Steak
- 1/2 pound Cremini Mushrooms
- 1/4 cup Red Wine
- 2 Sprigs Thyme
- 1/2 pound Arugula (lightly dressed in olive oil)
- 1 Clove Garlic (minced)
- 1 Small Onion (chopped)
- Salt and Freshly Ground Pepper
- Flour (for dredging)
- Olive Oil
- 1 tablespoon Butter

- 1/4 cup (52 g) soft tofu
- 1/2 banana, peeled
- 1/2 cup (75 g) frozen unsweetened strawberries
- 1 tablespoon honey or other sweetener, to taste
- 1/2 cup (120 ml) ice cubes
Vitamix: Chipotle Cheese Fondue

1. Place all ingredients, except cilantro, into the Vitamix container in order listed and secure lid
- For Fondue
- 1 cup (240 ml) lager beer or chicken stock
- 2 teaspoons lemon juice
- 1 tablespoon cornstarch
- 1 garlic clove, peeled
- 1 to 1 1/2 canned chipotle chilies minced, or to taste
- 1/4 teaspoon ground nutmeg
- 1 teaspoon fresh ground black pepper
- 8 ounces (227 g) Gruyére cheese, cubed
- 8 ounces (227 g) Emmental cheese, cubed
- 1 tablespoon fresh chopped cilantro
Crockpot Italian Chicken

- 1 recipe 90-Calorie Chocolate Cupcakes
- 1 recipe Chocolate Fudge Glaze
- 2 tablespoons creamy peanut butter
- 2 tablespoons light cream cheese, room temperature
- 2 tablespoons granulated no-calorie sweetener (or 3 packets)
- 1/3 cup light whipped topping, thawed

- Peanut Dipping Sauce:
- 6 boneless, skinless chicken thighs
- 4 cups ice water

- 1 tablespoon tomato paste
- 2 tablespoons chicken stock
- 2 tablespoons hoisin sauce
- 2 tablespoons peanuts, chopped
