Infra Honey Bourbon Pork Tenderloin

1. Blend honey, soy sauce and whiskey in small saucepan
- 2 pounds pork tenderloin, trimmed
- 1/4 cup honey
- 1/4 cup soy sauce
- 2 tablespoons bourbon whiskey

Melt the butter in a medium skillet over medium-high heat
- 1 tablespoon unsalted butter
- 1/2 medium onion, finely chopped
- Kosher salt
- 1 1/2 cups breadcrumbs
- 1/3 cup milk
- 2 teaspoons dry sherry
- 1/2 teaspoon mustard powder
- 3 large eggs
- 1/2 pound ground pork
- 1/2 pound ground turkey
- 1 tablespoon honey
- 1/2 teaspoon ground allspice
- Freshly ground pepper
- Vegetable oil, for frying
- 3 tablespoons lingonberry or cranberry preserves
- 1/2 cup sour cream
- Chopped fresh dill, for topping
- Fresh pickled cucumber slices, for serving

1. In a blender, combine the batter ingredients; cover and process until smooth
- BATTER:
- 3 eggs
- 3/4 cup plus 2 tablespoons milk
- 3/4 cup all-purpose flour
- 5 teaspoons butter, melted
- 1 tablespoon sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- FILLING:
- 1 cup (8 ounces) Mascarpone cheese
- 2 tablespoons confectioners' sugar
- 3 to 4 teaspoons minced fresh basil
- 1 teaspoon lemon juice
- 1-1/2 cups sliced fresh strawberries
- STRAWBERRY TOPPING:
- 2 cups sliced fresh strawberries
- 1/2 cup sugar
- 2 tablespoons orange juice
- 1 teaspoon strawberry or vanilla extract
- Dash salt
- 4 teaspoons butter, divided
Emeril's Garlic-Infused Oil and Dipping Sauce

To make the garlic oil, in a small saucepan, gently heat the oil over medium heat
- 1/2 cup extra virgin olive oil
- 4 cloves garlic, thinly sliced
- Balsamic vinegar
- Pinch red pepper flakes
- Pinch salt
- Freshly ground black pepper
- Finely grated Parmesan or Romano cheese
- Hot crusty loaf Italian or French bread, sliced
Vitamix: Lemon Garlic Dressing

1. Place all ingredients, except olive oil, into the Vitamix container in the order listed and secure lid
- 1 lemon, peeled, halved, seeded
- 1/2 teaspoon hot sauce
- 2 garlic cloves, peeled
- 1/2 teaspoon paprika

- 1 teaspoon salt

- 3 tablespoons Worcestershire sauce
- 1/3 cup canned chicken stock or broth
- 1 tablespoon tomato paste
- 2 1/2 pounds ground chuck (81 percent lean)
- 1/2 cup plain dry bread crumbs (recommended: Progresso)

- 3 cups paprika
- 2 cups sugar
- 2 cups garlic powder
- 1 cup salt
- 1 cup onion powder
- 1 cup seasoned salt (recommended: Lowery's)
- 1/2 cup chili powder
- 1/2 cup black pepper
- 1/2 cup Black Magic seasoning, recipe follows
- 2 cups onion powder
- 2 cups garlic powder
- 1 cup cayenne pepper
- 1/2 cup white pepper
- 1/2 cup black pepper
- 1 cup dried thyme
- 1 cup dried oregano
- 2 cups table salt
- 1 cup paprika
- 1 cup ground cumin
- Blend well, cover and store.
