- 1/4 cup (60 ml) egg substitute or 1 egg

- 2 sticks butter, softened, plus more for pan
- 5 pounds russet or Yukon gold potatoes
- One 8-ounce package cream cheese, softened

- 1/2 to 1 teaspoon seasoned salt
- 1/2 teaspoon kosher salt

Set aside or prepare the stock and tomatoes
- 3 cups Parmigiano and Herb-Fortified Stock
- 6 Roasted Tomatoes
- 2 large red bell peppers
- 2 lbs boneless, skinless chicken thighs, trimmed of all fat and skin (8 to 10 pieces)
- Salt and freshly ground black pepper
- 3 tbsp extra virgin olive oil
- 1/2 lb cremini mushrooms or 3 medium portabella caps, thinly sliced
- 2 medium sweet onions, thinly sliced
- 3 to 4 cloves garlic, chopped or sliced
- 1/4 cup dry sherry or 1/2 cup dry wine, white or red
- 1 1/2 tsp smoked sweet paprika
- A couple pinches saffron (20 to 24 threads)

- 1/4 cup white wine vinegar, balsamic vinegar, red wine vinegar, or aged sherry wine vinegar
- 2 to 4 teaspoons Dijon mustard
- 1 teaspoon kosher salt plus more
- Freshly ground black pepper
- 2/3 to 3/4 cups extra-virgin olive oil

- 1 (1-pound) package frozen puff pastry, thawed
- 1/3 cup cajeta or thick caramel sauce

- 1 teaspoon canola oil
- 1/4 cup shredded part-skim mozzarella cheese

- 1 cup chopped ripe strawberries (5 large strawberries)
- 1 cup chopped seeded watermelon

- 1 1/2 cups ketchup

- 3 tablespoons Dijon mustard
- 1 tablespoon Worcestershire sauce
- 2 teaspoons chili powder
- 1 teaspoon cayenne pepper
- Kosher salt and freshly ground black pepper
