Chicken Burgers

1.In a large skillet, heat 1 tablespoon oil over medium
- 2 tablespoons vegetable oil, such as safflower
- 1 small onion, finely chopped
- 1/2 yellow or orange bell pepper, chopped
- 1 celery stalk, finely chopped
- Coarse salt and ground pepper
- 1 pound ground dark-meat chicken
- 4 hamburger buns
- Lettuce, tomato, and mayonnaise, for serving

Preheat the oven to 400 degrees F
- 8 ounces cream cheese, at room temperature
- 1/3 cup sugar
- 2 extra-large egg yolks, at room temperature
- 2 tablespoons ricotta cheese
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon kosher salt
- 1 tablespoon grated lemon zest (2 lemons)
- 2 sheets (1 box) frozen puff pastry, defrosted

Preheat the oven to 350 degrees F
- 12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature
- 1 1/2 cups sugar
- 3 extra-large eggs, at room temperature
- 1 1/2 teaspoons pure vanilla extract
- 8 ounces (about 1 cup) sour cream
- 1/4 cup milk
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 2 half-pints fresh blueberries, picked through for stems
Pioneer Woman: Broccoli Cheese Soup

Melt the butter in a pot over medium heat, and then add the onions
- 1 stick butter
- 1 whole onion, diced
- 1/3 cup all-purpose flour
- 4 cups whole milk
- 2 cups half-and-half
- 1 pinch nutmeg
- 4 heads broccoli, cut into florets
- Salt and freshly ground black pepper
- 3 cups grated cheese (mild Cheddar, sharp Cheddar, Jack, etc.)
- Chicken broth, if needed
Guilt Free Onion Cheese Ball

1. In a mixing bowl, beat the cheeses
- 1 package (8 oz.) fat-free cream cheese, softened
- 8 slices (3/4 oz. ea.) fat-free shar cheddar cheese, cut
- into thin slices
- 1 small onion, diced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- Dash hot pepper sauce
- 1/2 cup minced fully cooked lean ham
- Fresh vegetables or reduced-cat crackers

1. Preheat oven to 250 degrees
- 1/2 cup whole-wheat flour
- 1/2 cup all-purpose flour, (spooned and leveled)
- 3 tablespoons light-brown sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 large egg, lightly beaten
- 1 1/2 tablespoons unsalted butter, melted
- 2 teaspoons vegetable oil
- 1 large ripe banana, thinly sliced
- Maple syrup, for serving (optional)
Vitamix: Tortilla Soup

1. Place all soup base ingredients into the Vitamix container in order listed and secure lid
- 3 cups (720 ml) chicken, beef, or vegetable stock
- 1 Roma tomato, halved or about 1/2 cup chopped
- 1 carrot, halved or about 1/2 cup chopped
- 1 rib celery, halved or about 1/3 cup chopped
- 1 thin slice of onion, peeled or approximately 1 tablespoon chopped
- 1 garlic clove, peeled
- 1 thin slice of yellow squash
- 1 thin slice of red bell pepper
- 1 thin slice of cabbage
- 1 mushroom
- 1 teaspoon taco seasoning
- dash ground cumin
- salt and ground black pepper, to taste

- 2 teaspoon Mustard Powder

Preheat a grill to high. In a small bowl, mix the beef, bacon, and onion until well combined
- 4 oz 96% lean ground beef
- 11/2 tbsp 50% reduced-fat real bacon pieces
- 1 tsp dried minced onion
- 1 (about 31/2-inch-diameter) whole-wheat or whole-grain hamburger bun
- 1/2 oz light Swiss cheese slivers.
- 1 small leaf green lettuce
- 3 (1/4-in) slices plum tomato
- 1 tbsp ketchup or barbecue sauce
- Salt to taste
