Paula's Blackened Tilapia Sandwich with Cilantro Lime Mayonnaise

In a shallow dish, combine first 6 ingredients
- Cilantro Lime Mayonnaise:
- 1/4 cup sweet paprika
- 2 tablespoons ground thyme
- 2 teaspoons onion powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/4 teaspoon ground red pepper
- 1/2 cup (1 stick) butter, melted
- 4 (10-ounce) tilapia fillets
- 4 Kaiser buns, split, buttered and toasted
- Cilantro Lime Mayonnaise, recipe follows
- Store-bought mango salsa
- 1 cup mayonnaise
- 1/4 cup freshly chopped cilantro leaves
- 1 tablespoon fresh lime juice
Canning: Salsa for Canning

Peel and core the tomatoes: Bring a large pot of water to the boil
- 1 lb plum-style tomatoes
- 1/2 lb jalapeno peppers
- 1/2 lb onion
- 1/4 c. bottled lemon juice or vinegar
- 1 1/2 tsp salt

Braised Chicken with Orange and Scallions

- 1 chicken (3 1/2 to 4 pounds), cut into 10 pieces, reserve wings for another use

- 1 tablespoon olive oil
- 2 bunches scallions, halved crosswise
- 3/4 cup halved, pitted green olives
- 6 strips orange zest, plus 1/2 cup fresh orange juice (from 1 orange)

Preheat a deep fryer (or a large stockpot filled with oil) to 365°F
- 2-3/4 cups all-purpose flour
- 2 Tbsp baking powder
- 3/4 tsp kosher salt
- 1/2 cup sugar
- 1/2 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 1/8 tsp ground allspice
- 1/4 tsp ground ginger
- 1 egg
- 1 cup milk
- 1-1/8 cup pumpkin purée
- 1-1/2 tsp vanilla
- Oil (for frying)
- Confectioners' sugar (optional garnish)

- 2 cups uncooked elbow macaroni
- 1 can (12 ounces) white water-packed solid tuna
- 1 can (8 ounces) Hunt’s® Tomato Sauce
- 4 ounces reduced-fat cream cheese, cubed
- 1 small onion, finely chopped
- 1/4 teaspoon salt
- 1/2 teaspoon dried oregano
