Quick Chicken Fricassee

1. Pat chicken dry with paper towels and season with 1 teaspoon salt and 1/2 teaspoon pepper
- 2 pounds boneless, skinless chicken breasts, thighs, or a combination
- Table salt and ground black pepper
- 1 tablespoon unsalted butter
- 1 tablespoon olive oil
- 1 pound cremini mushrooms , stems trimmed, caps wiped clean and cut into 1/4-inch slices
- 1 medium onion, chopped fine (about 1 cup)
- 1/4 cup dry white wine
- 1 tablespoon unbleached all-purpose flour
- 1 medium garlic clove , minced or pressed through garlic press (about 1 teaspoon)
- 1 1/2 cups low-sodium chicken broth
- 1/3 cup sour cream
- 1 egg yolk
- 1/2 teaspoon freshly grated nutmeg
- 2 teaspoons juice from 1 lemon
- 2 teaspoons minced fresh tarragon

Homemade Twinkies: 1. Preheat the oven to 350°F (175°C) and adjust the oven rack to the lower-middle position
- Homemade Twinkies:
- Non-stick cooking spray or vegetable oil
- 1/2 cup cake flour
- 1/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons milk, preferably whole
- 4 tablespoons unsalted butter
- 1/2 teaspoon vanilla extract
- 5 large eggs, at room temperature
- 3/4 cup granulated sugar
- 1/4 teaspoon cream of tarter
- Frosting:
- 3/4 cup granulated sugar
- 1 tablespoon light corn syrup
- 3 large egg whites
- 1/8 teaspoon salt
- 1/2 teaspoon vanilla extract
Tzatziki Potato Salad

In a medium pot, cover your potatoes with cold water and bring them to a boil over high heat
- 4 pounds potatoes (I like tiny Yukon golds, but you can use whatever boiling potatoes you like for salads)
- 1 3/4 cups Greek yogurt (I used full-fat but I think other fat levels would work)
- 1/4 cup sour cream
- 2 tablespoons freshly squeezed lemon juice (from half a big lemon)
- 1 tablespoon white wine vinegar
- 1 tablespoon minced fresh dill
- 1 medium garlic clove, minced
- 2 teaspoons kosher salt (I use Diamond brand; use less if you use another, read why here)
- Freshly ground black pepper
- 1 hothouse or English cucumber (1 pound), unpeeled but quartered lengthwise, seeds removed
- More ideas for additions: Crumbled feta, chopped green olives, chopped fresh mint leaves or a minced hot chile
Cinnamon Roll Swirl Cake Recipe

In a large bowl, mix all the ingredients together except for the butter
- For the batter~
- 3 cup flour
- 1/4 tsp salt
- 1 cup sugar
- 4 tsp baking powder
- 1 1/2 cup milk
- 2 eggs
- 2 tsp vanilla
- 1/2 cup butter, melted
- Topping~
- 1 cup butter, soft to the point of almost melted*
- 1 cup brown sugar
- 2 Tbsp flour
- 2 Tbsp cinnamon
Lemon Curd Tart with Olive Oil

MAKE TART SHELL: > Preheat oven to 425°F with rack in middle
- FOR TART SHELL:
- 3 tablespoons almonds with skins, toasted and cooled
- 1 cup all-purpose flour
- 1/4 + 1/8 cup confectioners sugar
- Pinch of fine sea salt
- 3/4 stick cold unsalted butter, cut into 1/2-inch cubes
- 1 1/2 large egg yolk
- 5 1/4 tablespoons fruity olive oil (preferably French)
- FOR LEMON CURD:
- 6 large lemons
- 1 1/2 cup granulated sugar
- 4 teaspoons cornstarch
- 4 whole large eggs plus 2 large yolks
- 1 stick unsalted butter, cut into 1/2-inch cubes
- 4 tablespoons fruity olive oil (preferably French)
- Equipment:
- a 9-inch round tart pan with removable side; a small offset spatula
- Spread dough in pan over ice bath to keep chilled while molding. Blind bake crust (cover entire crust & edges with aluminum foil and weight with dried beans.)
- For Curd, whisk ingredients without egg first to avoid cornstarch lumping.

- 300 gm egg whites (about 10 egg whites .. I used the egg whites from a carton)
- 1 1/2 cup white sugar
- 1/2 cup ground pecans
- small pinch of salt
- Whipped cream:
- 2 cups cold whipping cream
- 1/3 cup icing sugar
- 1 pkt whipped cream stabilizer such as 'whip it' (optional)
- Make about half a recipe of my Dulce De Leche Caramel Sauce.

Microwave butter for 10 seconds at a time until butter is collapsed but not melted
- Keeps and freezes well. Makes 2 cakes
- 4 eggs
- 8 oz caster sugar
- 8 oz butter
- 8 oz self-raising flour (SRF is a flour that has a leavening agent – baking powder – and salt added to it during packaging.) For a chocolate sponge use only 4oz and add 4oz of sieved cocoa
