Mini Vanilla Tea Cakes

If desired, meringue powder can be used instead of the egg whites when making the glaze
- For Cakes:
- 1 1/3 cups (170g) cake flour
- 3/4 tsp baking powder
- 1/4 tsp salt
- 8 Tbs. (1 stick/125g) unsalted butter
- 3/4 cup (185g) granulated sugar
- 2 eggs, lightly beaten
- 1 1/2 tsp vanilla extract
- 1/3 cup (80ml) milk
- 5 Tbs. seedless raspberry jam (optional)
- For the Glaze:
- 8 cups (1kg) confectioners' sugar, sifted
- 4 egg whites
- 1/2 cup (125ml) milk
- 2 Tbs. vanilla extract
- Food colouring as desired
- (added 2 1/2 tbsp poppy seeds)
Ricotta Balls

In a mixing bowl,combine ricotta, grated cheese, parsley and eggs and mix real well
- 1 lb. ricotta cheese
- 1 cup grated Locatelli cheese
- 2 Eggs and 1 egg for coating
- Dash Salt
- Dash Black Pepper
- 1 Tablespoon Parsley
- 2/3 cups Italian Style Bread Crumbs
- Oil for deep frying

1. Preheat oven to 325°F (160°C)
- Cake:
- 6 eggs, separated
- 3/4 cup (175 mL) unsalted butter
- 1 3/4 cups (425 mL) granulated sugar, divided
- 1 3/4 cups (425 mL) all-purpose flour
- 1 tsp (5 mL) baking powder
- 1/2 tsp (2 mL) salt
- 1/2 cup (125 mL) milk
- 3/4 tsp (4 mL) pure vanilla extract
- 1/4 tsp (1 mL) cream of tartar
- 3/4 cup (175 mL) sliced almonds
- Filling:
- 1 cup (250 mL) drained canned peaches
- or mandarin oranges
- 1 cup (250 mL) whipping cream
- 1 envelope (10 g) Dr. Oetker Whip it
- 2 tbsp (25 mL) granulated sugar
- 1/2 tsp (2 mL) icing sugar

- 2 eggs
- 2 tsp. vanilla extract
- 1 cup all-purpose flour
- 1 1/4 tsp. baking powder
- 1/2 tsp. kosher salt
- 4 Tbs. (1/2 stick) unsalted butter
- 3/4 cup firmly packed dark brown sugar
- 3/4 cup heavy cream
- 2 tsp. vanilla extract
- Pinch of kosher salt
Cheesy Bacon Bombs

Cube up the Cheese, and cut each Biscuit into fourths
- 1 can (8ct.) Flaky Layers Biscuits
- Cubed Mozzarella Cheese (one 1" cube per Bomb)
- 2 lbs. of Bacon (1 slice per Bomb)

- Buttermilk Glaze:
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 3 large eggs
- 2 cups sugar
- 3/4 cup vegetable oil
- 3/4 cup buttermilk
- 2 teaspoons vanilla extract
- 2 cups grated carrot
- 1 (8-ounce) can crushed pineapple, drained
- 1 (3 1/2-ounce) can flaked coconut
- 1 cup chopped pecans or walnuts
- 1 cup sugar
- 1 1/2 teaspoons baking soda
- 1/2 cup buttermilk
- 1/2 cup butter or margarine
- 1 tablespoon light corn syrup
- 1 teaspoon vanilla extract
- Cream Cheese Frosting:
- 3/4 cup butter or margarine, softened
- 1 (8-ounce) package cream cheese, softened
- 1 (3-ounce) package cream cheese, softened

Gooey S’mores Cookies

Preheat oven to 350 degrees F
- 1/2 cup (1 stick) butter, softened
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1 egg
- 1 teaspoon vanilla
- 1 1/3 cups flour
- 3/4 cup graham cracker crumbs (7 full graham cracker sheets)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup Mini Hershey’s Kisses (or chocolate chips/chunks)

Ricotta Cheese Balls

Whip egg whites until stiff
- 1/2 cup ricotta cheese
- 1/4 cup shredded cheddar
- 1 egg white
- 1 cup panko bread crumbs (the recipe calls for normal bread crumbs, but I like using panko as it gives an added crispiness to the cheese balls)
- 1 tbsp flour
- 1 tsp dried herbs ( whatever you like, optional)
- salt and pepper to taste (while seasoning keep in mind cheddar is salty as well)
