- 1 whole chicken (about 3 1/2 pound), backbone discarded and chicken cut French style into 8 pieces (see cooks' note, below)
- 1 tablespoon vegetable oil
- 3 tablespoons unsalted butter, divided
- 4 medium leeks (white and pale green parts only), finely chopped (2 cups)
- 2 tablespoons finely chopped shallot
- 4 medium carrots, halved diagonally
- 1 cup dry white wine (preferably Alsatian Riesling)
- 1 1/2 pound small (2-inch) red potatoes

- a pinch of salt
- splash of flavoring
- Whipped Creme Fraiche:
- 1 cup of cream
- 1 TBSP of buttermilk
- Italian Meringue:
- 1 cup of sugar
- a little water, just enough to get sugar wet
- 5 egg whites
- pinch of salt
- 1 teaspoon lemon juice or 1/4 teaspoon of cream of tartar
- Whipped Sour Cream:
- cold, heavy cream
- equal amount of sour cream
- sugar to tast
- pinch salt
- flavor as desired
- Silken Tofu Whipped Topping:
- package of firm tofu (10.5 oz.)
- 2 TBSP sugar/brown sugar/agave nectar
- pinch of salt
- splash of vanilla and lemon juice
- sugar or sweetener to taste (add another TBSP or two of sweetener)
- Sour Cream Topping:
- 1 cup sour cream
- 1/3 cup of sugar
- 1 1/2 tsp vanilla (per cup of sour cream)
