Salted Caramel Chocolate Cake

Preheat oven to 350º. Set rack in the middle of the oven
- Dry:
- 1 1/4 c. + 2 tbsp. unbleached all-purpose flour
- 1/2 c. unsweetened cocoa powder
- 1 1/2 tsp. baking powder
- 1 tsp. sea salt
- Liquid:
- 1 c. half and half
- 1 tbsp. vanilla extract
- Creaming:
- 1 1/2 sticks (3/4 c.) unsalted butter, room temp
- 1 3/4 c. granulated sugar
- 4 large eggs
- Salted Caramel Swiss Meringue Buttercream:
- 1 c. sugar
- 1/4 c. water
- 1/4 c. heavy cream
- heaping pinch of sea salt
- 1 1/2 c. (3 sticks) unsalted butter, room temperature
- 4 large egg whites
- Ganache:
- 1 1/4 c. (10 oz.) dark chocolate
- 2/3 c. powdered sugar, sifted
- 3/4 c. + 1 tbsp. heavy cream
- 2 large egg yolks
- 3 tbsp. unsalted butter, room temperature
- heaping dash of sea salt
Bananas Foster

In the 1950’s, New Orleans was the major port of entry for bananas shipped from Central and South America
- 1/4 cup (1/2 stick) butter
- 1 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/4 cup banana liqueur
- 4 bananas, cut in half lengthwise, then halved
- 1/4 cup dark rum
- 4 scoops vanilla ice cream

- 1 1/4 c. water
- 1/3 c. vegetable oil

- Note: These measurements are based on a Betty Crocker cake mix. If you chose to use a different brand, the ingredients and measurements might be different.
- Lemon Cream Filling
- 8 oz. cream cheese, softened
- 2 c. powdered sugar
- 3 Tbl. lemon juice
- 1 c. heavy whipping cream
- Vanilla Crumb Topping
- 1/2 c. all-purpose flour
- 1/2 c. powdered sugar
- 1/4 c. cold butter
- 1/2 tsp. vanilla extract
Flourless Chocolate-Almond Cake

Flourless chocolate cake is a long-standing tradition on Passover
- Chocolate Ganache:
- 1 1/4 cups (10 ounces) margarine
- 1 1/4 cups (10 ounces) sugar
- 9 eggs, separated
- 10 ounces semisweet or bittersweet chocolate, shaved (see picture below)
- 2 3/4 cups (10 ounces) blanched almond meal (also called almond flour)
- 1 1/2 pounds semisweet or bittersweet chocolate, finely chopped
- 3 cups Coffee Rich or other heavy cream substitute
- 4 tablespoons margarine
- Blackberries, for garnish
Authentic Tiramisu

I got this recipe from my cousin in Italy when I was ten years old
- 250-375 ml (1 - 1-1/2 cups) strong espresso, cooled to room temperature
- 4 large eggs or 5 small/medium eggs, separated
- 4-5 tbsp sugar (one tablespoon per egg) I use a regular spoon to measure - if you use a measuring spoon it will taste sweeter (personal preference).
- 500 g (16 oz) mascarpone cheese, room temperature
- 1 200-250 g (7-9 oz) pkg Savoiardi or Pavesini (lady fingers) These are known as Löffelbiscuits in Germany.
- 2 tbsp unsweetened cocoa powder (or to taste) Again, I use a regular spoon but a measuring spoon will also work.
