To Make DOUGH: Mix 2 cups flour, yeast, sugar and salt in a large bowl
- DOUGH:
- 7 to 7-1/2 cups flour
- 1 envelope Fleischmann's® RapidRise™ Yeast
- 2/3 cup sugar
- 1-1/2 teaspoons salt
- 1-1/2 cups water
- 2/3 cup shortening
- 1 cup mashed potatoes (prepared instant mashed potatoes may be used)
- 2 eggs
- 1/4 cup butter OR margarine, softened
- FILLING:
- 1 cup sugar
- 2 tablespoons Argo® Corn Starch
- 1 tablespoon lemon peel
- 1/3 cup lemon juice
- 1/3 cup water
- 6 egg yolks, beaten
- 1/4 cup butter OR margarine
- FROSTING:
- 1 package (8 ounces) cream cheese, softened
- 1/2 cup (1 stick) butter OR margarine, softened
- 1 teaspoon lemon juice
- 2-1/2 cups powdered sugar
- 1 teaspoon lemon peel

BERRY RICOTTA MUFFINS

Preheat oven to 350°F (180°C)
- 1 cup (250 ml) whole wheat flour
- 1 cup (250 ml) unbleached all-purpose flour
- 1/2 cup (125 ml) oatmeal
- 1/4 cup (60 ml) wheat or oat bran
- 2 tbsp (30 ml) ground flax seeds (optional)
- 1 tbsp (15 ml) baking powder (i added a little more)
- 1 tsp (5 ml) baking soda
- 1/2 tsp (2 ml) salt
- 1/2 cup (125 ml) soft butter (i used vegetable oil)
- 1/2 cup (125 ml) brown sugar (added 2 tbsp more)
- 2 eggs (i used 1 egg and 2 egg whites)
- 1 cup (250 ml) Canadian Ricotta
- 1/2 cup (125 ml) milk (too dry, added an extra 1/4 cup)
- 1 cup (250 ml) frozen berries (i used 2 cups berries)
OTHERS - Nutella Buttercream Frosting

Cream together butter and ½ cup of confectioner’s sugar at a time
- 1 cup unsalted butter, softened
- 3 1/2 – 4 cups confectioner’s sugar, sifted
- 1/2 cup Nutella
- 1 tablespoon vanilla extract
