- 1-1/2 C. flour
- 1 tsp. sugar
- 2 tsp. baking powder
- 1 tsp. salt
- 2 eggs
- 1-1/4 C. milk
- 3 Tbsp. shortning or oil
Cannoli Cupcakes

- Cupcakes:
- 2 1/2 cups all-purpose flour
- 2 tablespoons orange zest
- 1 tablespoon baking powder
- 1 teaspoon salt
- 2 cups sugar
- 8 ounces (2 sticks) unsalted butter
- 4 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon orange oil
- 1 cup milk
- Filling:
- 2 cups ricotta cheese
- 1/2 cup confectioners' sugar
- 2 tablespoons finely chopped bittersweet chocolate
- 2 tablespoons finely diced candied orange peel
- 5 ounces bittersweet chocolate, finely chopped
- 6 ounces heavy cream
- 2 tablespoons sugar
- 2 cups heavy cream
- 1/2 cup confectioners' sugar
- 1/2 cup almond paste
- Toasted almonds, for garnish
Homemade Caramel

- 1 cup unsalted butter (2 sticks)
- 2 1/4 cups brown sugar
- 1 cup light corn syrup
- 1 14 oz can sweetened condensed milk
- 1 tsp vanilla
Blueberry muffins with Greek yogurt

Preheat your oven to 375°F
- 5 Tablespoons unsalted butter , softened
- 1/2 cup sugar
- 1 large egg
- 3/4 cup sour cream or plain Greek yogurt (I used Chobani 0%)
- 1/2 teaspoon grated lemon zest (I omitted because I didn't have any lemons)
- 1 and 1/2 cups all-purpose flour
- 1 and 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup blueberries, fresh or frozen (if frozen, do not defrost or thaw)
Raw Carrot Cake

Carrot Cake: Fine chop the carrots into a quick "shredded carrot" in the food processor, then scoop into a bowl
- Cake:
- 1 cup shredded raw carrot
- 1 cup raw walnuts
- 1 cup raw medjool dates, pits removed
- 1 cup dried unsweetened coconut
- 1 teaspoon vanilla extract
- 1/2 teaspoon Chinese Five Spice
- 1/3 cup raisins
- 1/3 cup chopped raw walnuts
- Icing:
- 1 cup raw cashews or macadamia nuts
- 2 tablespoons virgin coconut oil
- 2 tablespoons maple syrup or honey
- 2 teaspoons vanilla extract
- pinch salt
- 1 tablespoon water, add more as needed
Cookie Dough Stuffed Cupcakes

1. Preheat oven to 350 degrees
- Cupcakes:
- 1 Betty Crocker Supermoist butter recipe yellow cake mix (and ingredients package calls for)
- 1 container Betty Crocker chocolate frosting or homemade chocolate frosting
- For the filling:
- 4 Tablespoons (1/4 cup) unsalted butter, at room temperature
- 6 Tablespoons light brown sugar
- 1 cup plus 2 Tablespoons all-purpose flour
- 7 ounces sweetened condensed milk (1/2 a can)
- 1/2 teaspoon vanilla extract
- 1/4 cup mini semisweet chocolate chips
- (optional) 1/4 package of Pillsbury refrigerated cookie dough for cookie garnishes
Chocolate Thimbles

Cut the almonds to rough chop, separate the egg and set aside
- 1/2 cup unsalted butter, room temperature
- 1/2 cup white sugar
- 1 egg, separated
- 1 teaspoon vanilla
- 1 1/4 cups all purpose flour
- a pinch of salt
- 3/4 cups raw almonds, chopped
- a tablet of chocolate
- 3 tablespoon cream.

- 4 oz. pancetta, minced
- 2 cloves garlic, thinly sliced crosswise
- 2 Fresno or Holland chiles, stemmed and thinly sliced crosswise
- 2 3⁄4 lbs. littleneck clams (about 30), scrubbed clean
- 1 ⁄3 cup dry white wine
- 3 tbsp. roughly chopped fresh flat-leaf parsley

- 1-1/2 cups sugar
- 1/3 cup Argo® or Kingsford's® Corn Starch
- 2 cups water
- 5 egg yolks, lightly beaten
- 1/2 cup lemon juice
- 1 tablespoon freshly grated lemon peel
- 2 tablespoons butter OR margarine
- 1 (9-inch) baked deep dish pie crust
- MERINGUE:
- 5 egg whites
- 1/2 cup sugar
- 1 teaspoon Argo® or Kingsford's® Corn Starch
