Sift together the all-purpose flour, cake flour and salt into a bowl
- 3 cups all-purpose flour, plus more as needed
- 2 1/4 cups cake flour
- 1 1/2 tsp. salt
- 2 1/4 cups (4 1/2 sticks) unsalted butter, at room temperature
- 1 1/2 cups confectioners’ sugar
- 1 Tbs. vanilla extract
Dulce de Leche Ice Cream Cone Cupcakes

Dulce de Leche taste better on ice cream cone cupcakes!
- Dulce de Leche:
- 1 ten ounce can of sweetened condensed milk
- 1 cup whipping cream
- 3 tablespoons brown sugar
- Cupcakes:
- 18 flat-bottom ice cream cones
- 1/2 cup unsalted butter, at room temperature
- 1 cup packed light brown sugar
- 3 large eggs, at room temperature
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup 2% milk, at room temperature
- 1 teaspoon vanilla extract
- Frosting:
- 1/2 cup unsalted butter, at room temperature
- 1/4 cup dulce de leche
- 2 cups icing sugar, sifted
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- dulce de leche or melted chocolate, for drizzling

Pumpkin Pie

1. Preheat oven to 375 degrees F
- 1 recipe Pastry for Single-Crust Pie
- 1 15-ounce can pumpkin
- 1/2 cup sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 2 eggs, slightly beaten
- 3/4 cup half-and-half, light cream, or milk
Mom's Raised Doughnuts

1. Soak yeast in 1/2 cup warm (not hot) water-5 minutes
- Doughnuts:
- 1/2 cup water, warm (not hot)
- 2 packages active dry yeast
- 3/4 cup milk, lukewarm
- 1/4 cup sugar
- 1 teaspoon salt
- 4 cups all-purpose flour, sifted
- 1/3 cup shortening
- 2 eggs
- Glaze:
- 1 tablespoon water, warm (may need more to thin, but
- thicker is better)

Pavlova

- 3 cups sugar
- 1 egg
- Juice and zest of 1 lemon
- 2 tbsp. unsalted butter, cubed, and chilled
- 1/4 cup cornstarch
- 1 tbsp. distilled white vinegar
- 1 tbsp. vanilla extract
- 8 egg whites, room-temperature
- 1 cup heavy cream, chilled
- 1/2 cup chilled plain yogurt
- Strawberries, halved
- Kiwifruit, peeled, and sliced
Caramel Latte Cheesecake Squares

These squares will keep up to 4 days refrigerated, or can be frozen
- Oat Base:
- 1 ¼ cups (300 mL) rolled oats
- 2/3 cup (150 mL) all-purpose flour
- ½ cup (125 mL) light brown sugar, packed
- ½ tsp (2 mL) ground cinnamon
- ¼ tsp (1 mL) fine salt
- ½ cup (125 mL) unsalted butter, melted
- ½ cup (125 mL) Skor toffee bits
- Cheesecake:
- 12 oz (375 g) cream cheese at room temperature
- 1/3 cup (75 mL) light brown sugar, packed
- ¼ cup (50 mL) sugar
- 1 large egg
- 1 large egg yolk
- 1 tbsp (15 mL) instant coffee granules
- 1 tbsp (15 mL) pure vanilla extract
- ¼ cup (50 mL) Skor toffee bits
Chai Banana Muffins

adapted from Cooking Light followed the original recipe exactly, except I added 2 mashed ripe bananas to the liquid...
- 7.9 oz. all purpose flour (about 1 3/4 cup)
- 1/2 cup packed brown sugar
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/4 tsp. salt
- 2 chai tea bags, opened
- 3/4 cup low fat buttermilk
- 2 sm-med ripe bananas, mashed
- 1/4 cup butter, melted
- 1 tsp. vanilla extract
- 1 large egg, slightly beaten
- 1/4 cup sliced almonds, for muffin tops
Potato Croquettes - {Croquette Di Patate}

In a large pot of boiling salted water, cook the potatoes until tender
- 2 pounds all-purpose potatoes peeled, quartered
- 4 tablespoons butter melted
- 3 large egg yolks
- 3/4 teaspoon grated nutmeg
- 1/2 teaspoon fine sea salt
- 1/2 cup unbleached all-purpose flour
- 1 large egg beaten
CRUNCHY CABBAGE SALAD

Dressing: Place all dressing ingredients in blender for 30 secs
- Dressing:
- 1 pkt. slivered almonds (lightly toasted) -not sliced
- 1/2 cup sunflower seeds
- 1 white cabbage shredded
- 1/2 red cabbage shredded
- (I use 1/2 and 1/2 cabbage)
- 1 cup oil
- 1/2 cup red wine vinegar
- 1/2 cup sugar ( I try to use less sugar, so I use 1/3 cup - I have also tried 1/4 cup, but that changes the flavor, not as tasty)
- 2 tbsp soy sauce
- 2 vegetable cubes (I use McCormick's, no MSG)
