- 1 2/3 cups all-purpose flour
- 1/2 teaspoon kosher salt
- 3/4 cup apricot preserves
- 1 tablespoon water
- Rum Syrup, recipe follows
- 1 cup sugar
- 2/3 cup good dark rum
- 1/2 teaspoon pure vanilla extract
- Whipped Cream, recipe follows
- 2 cups (1 pint) cold heavy cream
- 2 tablespoons sugar
- 2 teaspoons pure vanilla extract
Mini Pumpkin Spice Cakes with Orange Glaze

Cake Preparation: Preheat oven to 350 degrees F
- Cake:
- Oil, for pans
- Flour, for pans
- 1 (18.25-ounce) box spice cake mix
- 1 1/4 cups water
- 1/3 cup vegetable oil
- 3 eggs

- 2/3 cup heavy cream
- 1 (12-ounce) bag premier white morsels
- Red and yellow food coloring

- Marzipan Stems and Leaves:
- 1 (7-ounce) package marzipan (recommended: Odense)
- Green food coloring
Jambalaya

Heat olive oil in a large Dutch oven over medium-high heat
- 1 tbsp olive oil
- 1 cup chopped onion
- 2 red bell peppers, chopped
- 2 green bell peppers, chopped
- 3 cloves garlic, minced
- 1 pkg andouille sausage, sliced
- 1 cup uncooked long-grain white rice
- 1 tsp paprika
- 1 tsp freshly ground black pepper
- 1 tsp dried oregano
- 1/2 tsp onion powder
- 1/2 tsp dried thyme
- 1/4 tsp garlic powder
- 1/2 tbsp ground chipotle chili powder
- 2 bay leaves
- 2 cups chicken broth
- 3/4 cup water
- 1 tbsp tomato paste
- 1/2 tsp hot pepper sauce
- 1 (14.5 oz) can diced tomatoes, undrained
- 1/2 lb peeled and deveined medium shrimp

Preheat oven to 350. Combine butter, peanut butter and sugars in a large mixing bowl
- 1 cup salted butter, softened
- 1 cup creamy peanut butter
- 1 cup brown sugar
- 1 cup sugar
- 2 eggs (at room temp)
- 1 1/2 tsp vanilla
- 2 3/4 cups flour
- 2 tsp. baking soda
- 48 reeses peanut butter cups (hearts for valentines)
- 1/2 cup sugar for rolling the dough into before baking
Canela Bunuelos with Anise Syrup

- Anise Syrup:
- 2 3/4 - 3 1/4 cups all-purpose flour
- 1 package active dry yeast
- 1/2 teaspoon ground canela (Mexican cinnamon) or stick cinnamon
- 1 cup milk
- 1/4 cup sugar
- 2 tablespoons shortening
- 1/2 teaspoon salt
- 1 egg
- Vegetable oil for deep-fat frying
- Powdered sugar (optional)
- (Yields about 1 cup)

- 1 2-inch stick canela (Mexican cinnamon) or cinnamon
- 1/3 cup finely chopped piloncillo (Mexican dark brown sugar) or packed brown sugar

- 2 cups (14 ounces) granulated sugar
- 2 teaspoons baking soda
- 3/4 teaspoon salt
- 1 1/2 teaspoons apple pie spice

- 1/2 cup (3 1/4 ounces) vegetable shortening (trans-fat free)
- 4 cups (12 ounces) peeled, chopped apples (about 1 pound before peeling)
