- Homemade Chocolate Cannoli Shells:
- 1 15 ounce carton ricotta cheese
- 1/4 cup granulated sugar
- 4 teaspoons unsweetened cocoa powder
- 1 teaspoon vanilla
- 1/2 teaspoon finely shredded orange peel
- 1/4 cup finely chopped dark or bittersweet chocolate
- 10 - 12 Homemade Chocolate Cannoli Shells or packaged cannoli shells
- Powdered sugar
- Unsweetened cocoa powder (optional)
- Yield: 32 cannoli shells Cook 3 mins to 4 mins
- 2 cups all-purpose flour
- 1/2 cup sugar
- 1/2 cup unsweetened cocoa powder
- 1/8 teaspoon salt
- 1/4 cup shortening
- 2 eggs, lightly beaten
- 1/4 cup milk
- 2 tablespoons honey
- 1 egg white
- Oil for deep frying
Hot Fudge Peanut Butter Pie

- 2 2/3 cup full fat shredded unsweetened coconut (one 8 oz package) OR 1 cup of coconut butter

Napoleon "Cake"

1. Pastry: Heat oven to 400 degrees F
- Pastry:
- 1 sheet frozen puff pastry, thawed
- Cream Filling:
- 8 ounces Neufchatel cream cheese, softened
- 8 ounces mascarpone (see below)
- 3/4 cup confectioners' sugar
- 1 teaspoon grated orange rind
- Glaze:
- 1 cup confectioners' sugar
- 1 tablespoon plus 1 teaspoon warm water
- 1/3 cup semisweet chocolate chips, melted
- Substitute recipe for mascarpone:
- 1 . Use the "freshest, best-quality" cream cheese you can find.
- 2 . Mix equal amounts of cream cheese and sour cream.
- 3 . Mix 1/2 pound of ricotta cheese with 1 cup of heavy cream in a food processor until it forms a homogeneous cream (this substitutes for about 1 pound of mascarpone).
Whipped Cream Cheese Frosting for Cinnamon Rolls

Light, creamy and not too sweet, this is one of my favorite cream cheese frostings
- 16 ounces cream cheese, room temperature
- 1 1/2 cup powdered sugar
- 1 teaspoon vanilla
- 1 cup heavy cream, cold. Higher the fat content, the better (I'm using 40% Ultra)

Black-Bottomed Nutella Swirl Mini Cheesecakes

- For the black bottom:
- 3/4 cup (3-3/4 oz.) finely ground chocolate cookies (I use Nabisco® Famous® Chocolate Wafers)
