Chocolate Chip Cookies

1. PREHEAT oven to 375 degrees F
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup butter or margarine, softened
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 1 teaspoon vanilla extract
- 2 large egg
- 1 (12 ounce) package NESTLE® TOLL HOUSE®

John’s New York Deli-Style Potato Salad

I grew up on Long Island. For 18 years, I devoured a lot of New York Deli Potato Salad
- The Spuds: 5 pounds of boiled red potatoes
- 1/2 cup of carrots
- 1/4 cup of minced curly parsley (fresh!!!)
- 1 Cup of Hellman’s Mayo (I use Hellman’s Light)
- 1/4 cup white vinegar
- 1/4 cup sugar
- 1 tbsp kosher salt (Salt is tricky… add to taste starting with half )

Sauté the pepper, onion, prosciutto, and ham in a little oil until the onion is translucent
- The quantities are somewhat more aproximate than one finds in professionally written recipes; I'd figure a quarter pound in all of pancetta and ham (100 g in all), about a quarter pound (100 g) of olives, and a quarter cup of capers.
- 1 small bell pepper, diced
- A medium onion, diced
- Pancetta and ham, shredded
- A hard-boiled egg, peeled, flattened, and cut up into bits
- Olives, pitted
- Capers, rinsed and patted dry
- Hot peppers (either dried or pickled)
- Fresh oregano and parsley, minced
- 5 cups (500 g) flour
- A packet of dry yeast, or a cube of fresh live yeast, dissolved in a little warm water
- Olive oil
- Salt
- Sugar

- Vegetable oil, for frying
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 2 teaspoons sugar
- 1 1/2 teaspoons salt
- 1 1/4 teaspoons Essence
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon freshly ground black pepper
- 2 eggs, beaten
- 1 cup buttermilk
- 1 large onion, grated
- 1/2 cup finely chopped green onions
- 2 jalapenos, seeded and minced
- Preheat a deep-fryer fill with oil to about 3/4 of the way full to a temperature of 375 degrees F.
- 2 1/2 tablespoons paprika
- 2 tablespoons salt
- 2 tablespoons garlic powder
- 1 tablespoon black pepper
- 1 tablespoon onion powder
- 1 tablespoon cayenne pepper
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
- Combine all ingredients thoroughly.
- Yield: 2/3 cup
