Pumpkin Creme Brulee

Preheat the oven to 325 degrees F
- 2 cups heavy cream
- 1/4 cup light brown sugar
- 1/4 cup sugar, plus 4 teaspoons
- 8 large egg yolks
- 1/2 teaspoon pure vanilla extract
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon grated nutmeg
- 1 cup mashed cooked pumpkin

In a bowl, whisk together the flour, baking powder, salt and sugar
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 Tbsp sugar
- 4 eggs, separated

- 4 Tbsp unsalted butter, melted, plus more for cooking
- Fillings, such as jam, peanut butter, chocolate ganache, chocolate chips or fruit

Goat Cheese, Leek and Mushroom Tart

- 3 Tbs. unsalted butter
- 3 lb. leeks, white parts and 1 inch of pale green parts, thinly sliced
- 2 tsp. fresh thyme leaves
- 1 bay leaf
- 1/2 cup chicken stock
- 1 tsp. salt
- 3/4 tsp. freshly ground pepper
- 1/3 cup crème fraîche
- 3 oz. soft goat cheese, crumbled
- 1/2 lb. mixed mushrooms, such as oyster, chanterelle and cremini, brushed clean and coarsely chopped

- 2 1/2 cups flour
- 1 tsp baking soda
- 2 tsp cream of tartar
- 1/2 tsp cinnamon
- 1/2 tspsalt
- 1 cup unsalted butter, sliced
- 1 1/3 cup dark brown sugar, lightly packed
- 1/4 cup + 2Tbsp sugar
- 1 large egg
- 1 egg yolk
- 1 Tbsp vanilla extract
- 1 Tbsp buttermilk
- Kraft Caramel squares, cut in half
- 1/4 cup sugar, for rolling
- 2 tsp cinnamon, for rolling
