- 1 (7-ounce) pouch albacore tuna, drained well and shredded by hand
- 2 green onions, chopped fine
- 2 teaspoons Dijon mustard
- 2 large eggs, beaten
- 1 teaspoon freshly squeezed lemon juice
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 3/4 cup panko bread crumbs, divided
- Olive oil, for sauteing

Mix gelatin and sugar in a bowl; add boiling water and stir until gelatin completely dissolves, about 5 minutes
- 1/2 cup boiling water

- 8 ounces cream cheese

BB King's BBQ Ribs

Rub ribs well with some of the Dry Spice Rub and refrigerate, covered, for 4 to 6 hours
- Dry Spice Rub:
- 2 Pounds Pork Loin Ribs
- Dry Spice Rub (recipe follows)
- 4 cups canned tomato sauce
- 1/2 cup diced tomato
- 1/4 cup firmly packed brown sugar
- 1/4 tablespoon Worcestershire sauce
- 2 tablespoons dried onion
- 1/4 cup soy sauce
- 1/4 cup water
- Coleslaw and grilled corn on the cob as
- accompaniments
- 1 cup chili powder
- 1 tablespoon garlic granules
- 1 teaspoon onion powder
- 1/2 teaspoon cumin
- 1 1/2 teaspoons salt
- 2 tablespoons seasoned salt
- In a jar combine all ingredients well and store in a dry place,
- covered, until ready to use.

- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup dark brown sugar
- 1/2 cup sugar
- 1 cup butter, room temmp
- 2 eggs, room temp
- 2 teaspoons vanilla extract
- 1 package toffee bits (8 oz)
- 1 cup coarsely ground almonds
- 4 ounces milk chocolate
- 1/2 tablespoon olive oil
Easy Pastry Shop Apple Tart

Preheat the oven to 400 degrees F
- FOR THE CRUST:
- 1/2 cup butter
- 1/3 cup sugar
- 1/2 teaspoon vanilla extract
- 1 cup all-purpose flour
- FOR THE CREAM FILLING:
- 8 ounces cream cheese, softened
- 1/4 cup sugar
- 1 egg
- 1/2 teaspoon vanilla extract

- 4 egg whites
- Large pinch salt
- 1 1/4 c. sugar
- 1/2 c. light corn syrup
Thomas Keller Chocolate Chip Cookies

Position the racks in the lower and upper thirds of the oven and preheat to 350F
- 2 1/3 + 1 Tbsp. all-purpose flour
- 2 sticks ( 8oz ) of cold butter cut into small pieces
- 3/4 tsp. of baking Soda
- 1 tsp. of kosher salt ( I used 1 1/2 tsp. of sea salt )
- 1 cup of packed dark brown sugar
- 3/4 cup of granulated sugar
- 2 large eggs
- 5 oz of 55% chocolate, cut into chip sized pieces *
- 5 oz of 70-72% chocolate, cut into chip sized pieces *
- 1 tsp of ground cinnamon ( optional, not in actual recipe )
- All I had on hand was some Ghirardelli bittersweet chocolate. It worked perfectly but I would love to try this with even darker chocolate. *
Lemon Curd Custard Ice Cream

In a bowl, whisk together the egg yolks, sugar, vanilla, and salt
- FOR THE ICE CREAM:
- 3 large egg yolks
- 1/2 cup sugar
- 1 teaspoon pure vanilla extract
- Pinch salt
- 1 cup half and half (I used whole milk)
- 1 cup heavy cream
- 1 cup lemon curd (store bought or homemade, see below)
- FOOLPROOF & PERFECT EASY LEMON CURD:
- 3/4 cup fresh lemon juice
- 1 Tbs grated lemon zest
- 3/4 cup sugar
- 3 eggs
- 1/2 cup unsalted butter, cubed
