Hashbrown Egg Nests

This is a hash brown take on my biscuit based Breakfast Nests
- 1 (30-ounce) bag frozen hash browns
- 4 ounces parmesan, shredded
- 1/4 cup olive oil
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 1 tablespoon cayenne pepper (optional)
- 1 teaspoon salt (or to taste)
- 1 teaspoon pepper (or to taste)
- 8 slices ham (sliced into 1 inch strips)
- 8 slices cheddar (sliced into 1 inch strips)
- 8 eggs
Hot Dog Eggrolls

- 4 hot dogs, skinny ones work best
- 1/2 cup cheese, shredded (Mexican, or cheddar)
- 1/4 cup salsa, optional

Sous Vide Potatoes

I tried this simply for giggles to see if I could Sous Vide potatoes
- 1 1/2 pounds fingerling Yukon Gold Potatoes
- 3 tablespoons butter
- 1 tablespoon extra virgin olive oil
- 1 tablespoon rosemary, dried
- 1 teaspoon thyme, dried
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
Crispy Cheddar Chicken Tenders

A version of baked chicken strips with some cheese thrown in and a nice sauce
- 1 lb Chicken Tenders (or 2 breasts cut into strips or about 6 tenders)
- 1 Sleeve Ritz crackers
- 1/4 cup Mayo
- 1 cup grated cheese (cheddar or Mexican blend)
- Salt and Pepper
- Parsley
- 1 10oz can cream of chicken soup
- 2 Tb sour cream
- 2 tb butter
- NOTE: The sauce is enough for a double batch of tenders
